Ingredients
Red Velvet Crumb
- 1 box red velvet cake mix
- Ingredients listed on cake mix packaging (usually eggs, oil, water)
Cream Cheese Filling
- 16 ounces cream cheese, room temperature
- 4 tablespoons butter, room temperature
- 1/2 cup powdered sugar
- 2 cups graham crackers, crushed
- 1 teaspoon vanilla extract
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line or grease two 8-inch cake pans to prepare for baking the red velvet cakes.
- Prepare Cake: Follow the instructions on the red velvet cake mix packaging to make the batter, bake it in the prepared pans, and then allow the cakes to cool completely at room temperature.
- Crumble Cake: Once the cake has cooled, crumble it by hand until it resembles coarse sand. If the crumbles feel too moist, spread them on a lined baking sheet and dry in the oven at 350°F for 5-6 minutes to remove excess moisture.
- Combine Cream Cheese Filling: In a large bowl, use an electric hand mixer to cream together the room temperature cream cheese, butter, and powdered sugar until light, fluffy, and aerated.
- Prepare Graham Cracker Powder: Place graham crackers into a ziplock bag and crush finely using a rolling pin. Add the crushed graham crackers and vanilla extract to the cream cheese mixture and mix thoroughly until evenly combined.
- Shape Filling: Using a 2 teaspoon cookie scoop, portion out the cream cheese mixture. Roll each scoop into a smooth, round ball with your hands. Place the balls on a lined baking sheet or plate and refrigerate for 1 hour to firm up.
- Coat Bites: Once chilled and firm, roll each cream cheese ball in the red velvet cake crumbs, ensuring that all sides are fully coated. Use your hands to reshape and smooth the bites as needed.
- Serve or Store: Enjoy these cheesecake bites immediately, or store them in the refrigerator until ready to serve for a cool and delicious treat.
Notes
- If the red velvet cake crumbs feel too moist, drying them briefly in the oven helps them adhere better and improves texture.
- Room temperature cream cheese and butter mix more evenly for a smooth filling.
- Make sure the cheesecake bites are well chilled before coating to maintain their shape.
- These bites can be stored in an airtight container in the refrigerator for up to 3 days.
- For the graham crackers, you can substitute with digestive biscuits or similar crackers if desired.
- Use a small cookie scoop to ensure uniform bite sizes for even chilling and coating.
