Ingredients
Cookie Dough
- 2/3 cup shortening
- 1 3/4 cups white sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup buttermilk (plus up to 1/4 cup more if needed)
- 1 teaspoon red gel food coloring
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon salt
Filling
- Approximately 1 tablespoon marshmallow buttercream per sandwich
Instructions
- Preheat oven: Heat your oven to 350°F (175°C) to prepare for baking your cookies.
- Cream shortening and sugar: In a stand mixer, beat together the shortening and sugar until smooth and creamy.
- Add eggs: Add eggs one at a time to the creamed mixture on medium-low speed, ensuring each is fully incorporated before the next.
- Combine wet ingredients: With the mixer on low, add vanilla extract, buttermilk, and red gel food coloring until fully mixed.
- Whisk dry ingredients: In a separate bowl, whisk together all-purpose flour, unsweetened cocoa powder, and salt.
- Mix dry into wet: Gradually add the dry ingredients into the wet ingredients on low mixer speed, blending until a dough forms.
- Adjust dough consistency: If the dough feels too dry, add up to an additional 1/4 cup buttermilk to achieve a pipeable consistency.
- Pipe rosettes: Transfer small amounts of dough into a piping bag fitted with a 1M or 2D piping tip. Pipe individual rosettes onto a parchment-lined baking sheet.
- Bake cookies: Bake in the preheated oven for 6 to 8 minutes. The cookies will still look slightly wet when done, which is normal. Allow them to cool to room temperature on the baking sheet.
- Assemble cookies: To create sandwiches, spread about 1 tablespoon of marshmallow buttercream on the bottom of one cookie, then top with another cookie and press gently to seal.
Notes
- Do not add more than 1/4 cup extra buttermilk to avoid overly wet dough.
- The cookies will look slightly wet when done baking; this is expected and ensures a soft texture.
- Use a piping bag with a 1M or 2D tip for the best rose shapes.
- Allow cookies to cool completely before assembling the sandwiches to prevent the buttercream from melting.
- Marshmallow buttercream can be homemade or store-bought according to preference.
