Ingredients
Red Layer
- 1 cup strawberries (fresh or frozen)
- 2–3 tablespoons honey or maple syrup
- 1 tablespoon lemon juice
White Layer
- 1 cup Greek yogurt or whole milk vanilla yogurt (Stonyfield recommended)
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
Blue Layer
- 1 cup blueberries (fresh or frozen)
- 2–3 tablespoons honey or maple syrup
- 1 tablespoon lemon juice
- 1/2 cup yogurt
- 1–2 drops blue gel food coloring (optional for light blue layer)
Instructions
- Make the red layer: Blend the strawberries, honey or maple syrup, and lemon juice in a blender until the mixture is completely smooth.
- Fill molds: Pour about 2–3 tablespoons of the red mixture into each popsicle mold, filling them about one-third of the way.
- Freeze red layer: Place the molds in the freezer for 30–45 minutes until the layer is slightly firm but not fully frozen.
- Prepare the white layer: In a mixing bowl, stir together the Greek or vanilla yogurt, honey or maple syrup, and vanilla extract until smooth and well combined.
- Add white layer: Carefully spoon 2–3 tablespoons of the white yogurt mixture over the hardened red layer in each mold.
- Freeze white layer: Return the molds to the freezer for another 30–45 minutes until the white layer is slightly firm.
- Make the blue layer: Blend the blueberries, honey or maple syrup, and lemon juice until smooth.
- Strain blue mixture: Pour the blended blueberry mixture through a fine mesh strainer to remove skins for a smoother texture.
- Add blue layer: Pour 2–3 tablespoons of the strained blueberry mixture over the white layer in each mold.
- Optional light blue layer: For a pastel blue look, mix 1/2 cup yogurt with 1–2 drops of blue gel food coloring and use this instead of the dark blueberry layer.
- Insert sticks and freeze solid: Place popsicle sticks into the molds and freeze everything for 4–6 hours, or until fully solid.
- Remove and serve: To unmold, run the popsicle molds under warm water for 10–15 seconds to loosen popsicles, then serve immediately and enjoy.
Notes
- Honey or maple syrup can be adjusted for sweetness based on preference and dietary needs.
- Frozen berries can be used instead of fresh; thaw slightly for easier blending.
- Straining the blueberry layer improves texture by removing skins.
- The optional light blue yogurt layer is a great alternative for a softer, pastel appearance.
- Make sure each layer is slightly firm before adding the next to maintain distinct layers.
- Run warm water briefly to easily remove popsicles without melting them.
