Ingredients
Vegetables
- 4 cups shredded carrots
Herbs and Nuts
- 1/3 cup finely chopped pistachios
- 1 1/2 tablespoons chopped fresh dill
- 1 1/2 tablespoons chopped fresh or freeze-dried parsley
Dressing
- 1 tablespoon Dijon-style mustard
- 1/4 cup olive oil
- 1 tablespoon honey
- Zest of 1/2 large lemon
- 1 1/2 tablespoons fresh lemon juice
- Salt (about 1/4 teaspoon)
- Black pepper (about 1/8 teaspoon)
Optional
- Feta cheese for sprinkling on top
Instructions
- Prepare Dressing: In a wide-mouth jar, combine 1 tablespoon Dijon mustard, 1/4 cup olive oil, 1 tablespoon honey, lemon zest from half a lemon, and 1 1/2 tablespoons fresh lemon juice. Season the dressing with about 1/4 teaspoon salt and 1/8 teaspoon black pepper. Secure the lid and shake vigorously until the dressing is smooth and fully combined, ensuring no honey remains stuck at the bottom.
- Prepare Carrots: Wash and peel the carrots thoroughly. Using a julienne peeler or the large holes of a box grater, shred the carrots into thin strands. Measure to obtain 4 cups of shredded carrots and transfer them into a large mixing bowl.
- Assemble Salad: Add the finely chopped pistachios, chopped dill, and parsley to the shredded carrots. Pour the prepared dressing over the mixture to taste, as you may not need all of it. Gently toss the salad to evenly coat the carrots and herbs with the dressing.
- Adjust and Serve: Taste the salad and adjust seasoning with extra salt or pepper if needed. Serve the salad immediately for a fresh crunch, or chill it in the refrigerator for 15 to 30 minutes to allow the flavors to meld. If desired, sprinkle crumbled feta cheese on top just before serving.
Notes
- Using a julienne peeler gives the carrots a signature ribbon-like texture, but a box grater works well as a substitute.
- Fresh herbs enhance flavor, but freeze-dried parsley can be used as a convenient alternative.
- The salad is best served fresh but flavors deepen if chilled briefly before eating.
- Feta cheese is optional and can be omitted for a dairy-free version.
- Adjust honey and lemon quantities to balance sweetness and acidity to your preference.
