This Roasted Tomatoes with Burrata recipe features sweet cherry tomatoes roasted to perfection with garlic, thyme, and a hint of crushed red pepper flakes. Topped with creamy burrata cheese and fresh basil pesto, it’s a delightful and easy appetizer or side dish that pairs wonderfully with toasted bread or pasta.

  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

Tomatoes & Seasoning

  • 2 pints cherry or grape tomatoes
  • 1/4 cup olive oil
  • 4 cloves garlic, sliced
  • 3 sprigs fresh thyme
  • Pinch of crushed red pepper flakes
  • Kosher salt and black pepper, to taste

Toppings & Garnish

  • 8 oz burrata cheese
  • 2 to 3 tablespoons basil pesto
  • Fresh basil, for garnish
  • Crushed red pepper flakes, for garnish

Serving Suggestion

  • Toasted bread or pasta, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees F (200 degrees C) to prepare for roasting the tomatoes.
  2. Prepare Tomatoes: Arrange the cherry or grape tomatoes in a 9×13-inch baking dish. Drizzle the olive oil over the tomatoes and toss gently to coat evenly. Add sliced garlic, fresh thyme sprigs, crushed red pepper flakes, kosher salt, and black pepper to the dish, distributing them among the tomatoes.
  3. Roast Tomatoes: Place the baking dish in the preheated oven and roast for 30 to 35 minutes or until the tomatoes have burst and are tender and flavorful. Remove from oven once done.
  4. Add Burrata and Pesto: Break apart the burrata cheese into pieces and arrange it evenly over the warm roasted tomatoes. Spoon 2 to 3 tablespoons of basil pesto over the tomatoes and burrata, ensuring a flavorful layer.
  5. Garnish and Serve: Garnish the dish with fresh basil leaves and an optional sprinkle of crushed red pepper flakes for extra heat. Serve immediately with toasted bread or cooked pasta for a complete dish.

Notes

  • Use ripe cherry or grape tomatoes for the sweetest flavor.
  • Burrata is best served fresh; add it just before serving to maintain its creamy texture.
  • You can substitute basil pesto with homemade or store-bought versions depending on convenience.
  • To make this dish vegan, replace burrata with a vegan cheese alternative.
  • If you prefer less heat, reduce or omit the crushed red pepper flakes.
  • To serve as a main dish, pair with your favorite pasta instead of bread.
