A simple and flavorful recipe for Roasted Delicata Squash with a sweet and savory maple sage glaze. This dish features tender, caramelized delicata squash slices coated in a buttery mixture of maple syrup, fresh sage, and garlic, roasted to golden perfection. Perfect as a side for fall and winter meals.

  • Total Time: 30-35 minutes
  • Yield: 6 servings

Ingredients

Squash

  • 2 medium delicata squash

Glaze

  • 3 Tablespoons unsalted butter (melted)
  • 1 Tablespoon maple syrup
  • 1 Tablespoon fresh sage (minced)
  • 2 cloves garlic (minced)
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the squash.
  2. Prepare Squash: Slice off both ends of each delicata squash, then cut each squash in half lengthwise. Use a spoon to scoop out the seeds, then slice the squash into ½-inch thick half-moon pieces.
  3. Make Glaze: In a large bowl, combine the melted unsalted butter, maple syrup, minced garlic, minced fresh sage, kosher salt, and black pepper. Stir well to create the glaze.
  4. Toss Squash: Add the sliced squash to the bowl and toss thoroughly to coat each piece evenly with the maple sage glaze mixture.
  5. Roast Squash: Spread the coated squash slices in a single layer on a baking sheet. Roast in the preheated oven for 20 to 25 minutes, flipping the pieces halfway through cooking to ensure even browning and caramelization. The squash is done when the edges turn golden and the squash is tender.

Notes

  • Delicata squash skin is edible and becomes soft when roasted, so no need to peel.
  • Flipping the squash halfway through roasting ensures even cooking and browning.
  • Use fresh sage for the best flavor, but dried sage can be substituted (use about 1 teaspoon dried).
  • Can be served warm as a side dish for poultry, pork, or vegetarian meals.
  • If you prefer a less sweet glaze, reduce the maple syrup to 1 teaspoon.
