Ingredients
Potatoes
- 3-6 large Russet potatoes, washed and peeled
Seasoning and Oil Mixture
- 1/4 cup olive oil
- 2 teaspoons salt
- Pepper to taste
- 1/2 teaspoon garlic powder
- 2 teaspoons rosemary
- 1/2 teaspoon paprika
Optional Garnish
- Fresh Parmesan cheese
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the potatoes.
- Prepare Baking Sheet: Line a baking sheet with aluminum foil and spray it with non-stick cooking spray like Pam. You might need two baking sheets depending on the quantity of potatoes.
- Boil Potatoes: Fill a large pot with 1-2 quarts of water, add 1 teaspoon of salt, and bring it to a boil. Then reduce to a simmer.
- Slice and Simmer Potatoes: Peel the potatoes and slice them about 1/2 inch thick. Place the potato slices into the simmering water and cook them for 3-4 minutes until they are slightly soft but still firm. Drain and rinse with cold water to cool down.
- Cut Heart Shapes: Using a small heart-shaped metal cookie cutter, cut out as many heart-shaped potatoes as possible from the slices. Collect the remaining potato scraps in a bowl with water to use for mashed potatoes if desired.
- Mix Seasoning: In a bowl, combine olive oil, salt, pepper, garlic powder, rosemary, and paprika, excluding the Parmesan cheese.
- Coat Potatoes: Pour the seasoning mixture over the heart-shaped potatoes, stir gently to coat evenly, and let them sit for about 5 minutes to absorb the flavors.
- Roast Potatoes: Arrange the coated potato hearts on the prepared baking sheet and roast them in the oven for 22-25 minutes. Flip them halfway through cooking for even roasting.
- Optional Broil: If your oven has a broiler, broil the potatoes for an additional 5 minutes to achieve a nice golden-brown color. Watch closely to prevent burning.
- Serve: Enjoy the roasted potato hearts warm, either dipped in ketchup or sprinkled with fresh Parmesan cheese as a garnish.
Notes
- The boiling step ensures potatoes are partially cooked, resulting in a crispy exterior and tender interior after roasting.
- You can save the leftover potato scraps to make mashed potatoes, reducing waste.
- Adjust seasoning to your taste – adding more rosemary or garlic powder can enhance the flavor.
- Keep an eye on the potatoes during broiling to avoid burning due to the high heat.
- These potato hearts make a charming and tasty side dish for gatherings or meals.
