Ingredients
Chicken and Marinade
- 1 lb. chicken breast
- 1/3 cup BBQ sauce
- 1/4 cup red onion, thinly sliced
Toppings
- 2-3 peaches, thickly sliced
- Cilantro for garnish
Instructions
- Preheat Oven: Preheat your oven to 375°F to prepare for baking the chicken and peaches.
- Pound Chicken: Place the chicken breasts inside a large resealable plastic bag. Using a meat tenderizer or rolling pin, pound the chicken until it is uniformly 1/2 inch thick to ensure even cooking.
- Marinate Chicken: Add the BBQ sauce and thinly sliced red onions into the bag with the chicken. Seal the bag and gently squeeze it to evenly coat the chicken with the sauce and onions. If preparing ahead, refrigerate the marinated chicken at this point.
- Assemble Dish: Spray a 9×13-inch baking dish with cooking spray. Pour the marinated chicken, sauce, and onions from the bag into the dish. Arrange thick peach slices evenly over the top of the chicken.
- Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F, signifying it is fully cooked and safe to eat.
- Serve: Remove from oven and garnish with fresh cilantro. Serve the chicken bake warm, optionally adding extra BBQ sauce for more flavor.
Notes
- You can prepare the chicken and marinade a day ahead to allow flavors to develop and save time on cooking day.
- Make sure not to overbake the chicken to maintain juiciness; use a meat thermometer for accuracy.
- Substitute peaches with nectarines for a similar flavor profile if peaches are not available.
- For a spicier version, add a dash of cayenne pepper or hot sauce to the BBQ marinade.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
