Ingredients
Vegetables
- 3 cups cherry tomatoes (about 2 pints or 30 ounces)
- 6 cloves garlic, thinly sliced
- Fresh basil for serving
Pantry
- 1/4 cup plus 2 tablespoons olive oil, divided
- Kosher salt, to taste
- Black pepper, to taste
Pasta
- 10 ounces pasta (such as spaghetti)
Dairy
- Parmesan cheese for serving
Instructions
- Preheat and roast tomatoes: Preheat your oven to 450 degrees F. On a rimmed baking sheet or oven-safe skillet, combine the cherry tomatoes, thinly sliced garlic, and 2 tablespoons of olive oil. Toss everything together until evenly coated. Roast in the oven for 10 minutes until the tomatoes are wrinkled and just beginning to burst. Remove from the oven and set aside.
- Cook pasta: While the tomatoes roast, bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Once cooked, reserve 3/4 cup of the pasta cooking water, then drain the pasta and set it aside.
- Prepare the sauce: In a small saucepan or the empty pasta pot, combine the reserved pasta water with 1/4 cup of olive oil. Bring the mixture to a rapid boil over medium-high heat and let it bubble vigorously for 4 minutes. This step emulsifies the sauce, making it smooth and light.
- Toss pasta with sauce and tomatoes: Reduce heat to low. Add the drained pasta to the sauce and toss well to coat all the noodles. Then gently fold in the roasted tomatoes, garlic, slivered fresh basil, salt, and pepper to taste. Toss everything together carefully to combine the flavors.
- Serve: Divide the pasta among plates and garnish with additional fresh basil and freshly grated Parmesan cheese as desired. Serve immediately and enjoy this delicious, comforting roasted tomato pasta.
Notes
- You can use any type of pasta you prefer, though spaghetti works best with this sauce.
- If you like, add a pinch of crushed red pepper flakes for a subtle heat.
- For a vegan version, omit the Parmesan or substitute with a vegan cheese alternative.
- Make sure not to overcook the pasta to keep the texture perfect when tossed in the sauce.
- Use the reserved pasta water to adjust sauce consistency as needed; it helps the sauce cling to the pasta.
