Ingredients
Truffle Mixture
- 10.5 oz / 300 g white chocolate, chopped into small bits
- 1/4 cup / 55 g / 1.9 oz unsalted butter, at room temperature
- 3 tbsp rosewater
- 1/3 cup / 60 g / 2 oz freeze-dried raspberries
Coating
- 1/2 cup / 50 g powdered (confectioners’/icing) sugar for dusting
Instructions
- Crush the raspberries: Using a food processor or blender, pulse the freeze-dried raspberries into fine crumbs to create a powdery texture that will evenly blend into the chocolate mixture.
- Melt the chocolate: Place the white chocolate and unsalted butter in a microwave-safe bowl. Heat at medium-high power for 30-second intervals, stirring well between each until the mixture is completely melted and smooth. Take care not to overheat or burn the chocolate.
- Make and chill the mixture: Add the crushed raspberry powder and rosewater to the melted chocolate mixture. Whisk gently until thoroughly combined, taking care not to incorporate too much air. Cover the bowl with cling film, pressing it directly onto the surface to prevent a skin from forming. Let it come to room temperature, then refrigerate for 2 to 3 hours or overnight to firm up. If any butter separates, stir it back into the mixture before proceeding.
- Form the truffles: Using a small cookie scoop, portion out 1-tablespoon-sized balls of the chilled mixture. Roll each ball in powdered sugar until fully coated. If the mixture softens too much to handle, return to the refrigerator to firm up again. Place the finished truffles on a lined plate and chill in the fridge for 30 minutes to an hour before serving.
Notes
- Ensure the white chocolate and butter mixture is cooled to room temperature before adding rosewater to prevent curdling.
- If you prefer a stronger rose flavor, you can add an extra teaspoon of rosewater, but be careful as too much can overpower the dessert.
- Store these truffles in an airtight container in the refrigerator for up to one week.
- For a decorative touch, you can also roll some truffles in crushed freeze-dried raspberries instead of powdered sugar.
