A vibrant and fresh salmon dish featuring a bright strawberry-scallion tapenade. This recipe combines juicy strawberries, briny olives, and fresh herbs to create a flavorful topping that perfectly complements pan-seared salmon fillets cooked to crispy-skinned perfection in just 20 minutes.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Tapenade

  • 3/4 cup diced strawberries
  • 1/3 cup pitted and chopped green olives (Castelvetrano recommended)
  • 1/4 cup thinly sliced scallions
  • 1/4 cup fresh chopped cilantro or parsley (or a mix of both)
  • 2 tsp lower-sodium soy sauce or tamari
  • 2 Tbsp extra-virgin olive oil (for tapenade)

Salmon

  • 4 (6-oz.) skin-on salmon fillets
  • 2 Tbsp extra-virgin olive oil (for cooking)
  • 3/4 tsp kosher salt, divided
  • 1/2 tsp freshly ground black pepper, divided

Instructions

  1. Prepare the tapenade: In a medium bowl, combine the diced strawberries, chopped green olives, sliced scallions, chopped herbs, soy sauce, 2 tablespoons of olive oil, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper. Toss all the ingredients together until well mixed and set the bowl aside to let the flavors meld.
  2. Season the salmon: Pat the salmon fillets dry with a paper towel to ensure crisp skin during cooking. Evenly season the flesh side of each fillet with the remaining 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
  3. Cook the salmon: Heat the remaining 2 tablespoons of olive oil in an indoor grill pan or skillet over medium-high heat. Place the salmon fillets skin-side down in the pan and cook for about 3 minutes or until the skin becomes crispy. Carefully flip the fillets onto the flesh side and continue cooking for another 2 to 3 minutes, or until the salmon reaches the desired doneness.
  4. Serve: Transfer the cooked salmon fillets to a serving platter and generously spoon the prepared strawberry-scallion tapenade over the top of each fillet. Serve immediately for best flavor and texture.

Notes

  • Castelvetrano olives are recommended for their mild, buttery flavor, but other green olives can be substituted.
  • To ensure crispy skin, make sure the salmon is dry before cooking and use a hot pan.
  • Adjust cooking time depending on salmon thickness and preferred doneness.
  • Fresh herbs can be parsley, cilantro, or a combination based on preference.
  • This dish pairs well with simple sides like steamed vegetables or quinoa.
