Ingredients
Shrimp and Coating
- 1 lb extra large shrimp (raw, peeled, and deveined)
- ½ tsp garlic salt
- 3-4 Tbsp cornstarch
- 6 oz vegetable oil (for frying)
Vegetables and Seasoning
- 2 cloves garlic (minced)
- ½ cup red onion (finely diced)
- ½ cup red bell pepper (finely diced)
- 3 stalks green onions (diced, separation of white and green parts)
- 1 jalapeno (finely diced)
- ½ tsp garlic salt
- ¼ tsp white pepper
Instructions
- Prepare Shrimp: Pat the shrimp dry thoroughly and sprinkle evenly with ½ teaspoon of garlic salt to infuse flavor into the shrimp before cooking.
- Coat Shrimp: Toss the salted shrimp in a bowl with 3-4 tablespoons of cornstarch until each piece is evenly coated. Set aside to allow the coating to adhere.
- Heat Oil: In a wok over high heat, heat vegetable oil until it reaches 375°F (190°C), the optimal temperature for frying shrimp to achieve a crispy texture.
- Fry Shrimp: Carefully add the shrimp in batches to avoid overcrowding. Fry for 1-2 minutes on each side until the shrimp turn golden and crispy. Remove shrimp and set aside on a plate. Repeat until all shrimp are cooked.
- Reserve Oil: Turn off the heat and reserve 1 teaspoon of the vegetable oil used for frying shrimp, discarding the rest.
- Prepare Aromatics: Wipe out the wok to remove any residue. Reheat on low heat and add the reserved teaspoon of oil along with minced garlic. Cook for about 30 seconds until fragrant.
- Sauté Vegetables: Add the finely diced red onion, red bell pepper, jalapeno, and the white parts of the green onions to the wok. Cook for approximately 1 minute to soften and blend flavors.
- Combine Shrimp and Seasoning: Add the fried shrimp back into the wok along with half of the remaining seasoning (½ tsp garlic salt and ¼ tsp white pepper) and the green parts of the green onions (chives). Cook for 1-2 minutes, stirring gently, allowing the shrimp to warm and the flavors to marry. Taste and add more seasoning if preferred.
- Serve: Transfer the shrimp to a serving dish and enjoy immediately while hot and crispy.
Notes
- Ensure shrimp are patted dry thoroughly before coating to achieve maximum crispiness.
- Do not overcrowd the wok during frying to maintain oil temperature and even cooking.
- The reserved oil holds flavor and is used to sauté the aromatics and vegetables to enhance the dish’s taste.
- You can adjust the amount of jalapeno to control the spice level.
- If preferred, serve with steamed rice or as an appetizer with dipping sauces like sweet chili.
