Samosa Chaat is a popular Indian street food dish featuring crispy samosas layered with flavorful spiced chickpea curry (chole), cooling yogurt, tangy chutneys, and vibrant garnishes. This dish combines textures and bold flavors, creating a delicious and satisfying snack or appetizer perfect for any occasion.

  • Total Time: 1 hour 10 minutes (excluding soaking)
  • Yield: 2 servings

Ingredients

Chickpea Curry (Chole)

  • ½ lb dried chickpeas
  • 1 tablespoon neutral oil
  • 1 teaspoon ghee (optional)
  • ½ teaspoon cumin seeds
  • ¼ teaspoon fenugreek seeds
  • ¼ teaspoon mustard seeds
  • 1 medium white onion, diced
  • 2-in piece of ginger, grated
  • 2 teaspoon minced garlic
  • ½ teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • ¼ teaspoon garam masala
  • ¼ teaspoon Kashmiri chili powder
  • 1 teaspoon chana masala
  • Salt, to taste
  • 2 whole dried red Indian chilis
  • 3 oz tomato paste
  • 1 cup water (for gravy)
  • 3 cups water (for cooking chickpeas)

Assembly

  • 1 cup cooked chole (prepared chickpeas with gravy)
  • ¼ cup dahi (yogurt)
  • 2 samosas
  • 2 tbsp cilantro-mint chutney
  • 2 tbsp tamarind date chutney
  • ¼ tsp chaat masala
  • ⅛ tsp roasted cumin powder
  • ¼ tsp Kashmiri chili powder
  • 2 tbsp pomegranate seeds
  • 1 tbsp red onion, finely diced
  • 1 tbsp sev
  • Cilantro, for garnish

Instructions

  1. Soak Chickpeas: Soak the dried chickpeas in twice the amount of water for 4-6 hours or overnight to soften them.
  2. Prepare Spice Base: Turn the Instant Pot to sauté mode. Heat neutral oil (and optional ghee). Add cumin seeds, fenugreek seeds, and mustard seeds. When seeds begin to pop, add diced onions and dried red chilies. Fry until onions turn light brown. Mix in ginger, garlic, turmeric, ground coriander, garam masala, Kashmiri chili powder, chana masala, and salt. Stir in tomato paste and simmer until oil separates and mixture darkens.
  3. Form Gravy: Gradually add 2 tablespoons of water to the spice mixture, stirring until a gravy forms and oil separates on the sides.
  4. Add Chickpeas: Rinse soaked chickpeas several times and drain. Add chickpeas to the gravy, tossing to coat well. Pour in 3 cups of water.
  5. Pressure Cook Chickpeas: Cover the Instant Pot with its lid and set to bean/chili mode. Cook for 45 minutes until chickpeas are tender.
  6. Thicken Curry: Carefully uncover the pot. Use a potato masher to mash chickpeas gently 5-6 times to thicken the gravy. Let the chickpeas rest with lid slightly ajar for 5-10 minutes to absorb flavors.
  7. Prepare Yogurt: Whisk the dahi (yogurt) until smooth and creamy.
  8. Assemble Chaat: Spread one cup of cooked chole evenly on the bottom of a serving bowl. Spoon the whisked yogurt in a circular motion starting from the center outward.
  9. Add Samosa and Chutneys: Crumble or smash the samosas and place on top of the yogurt layer. Drizzle the cilantro-mint chutney and tamarind-date chutney over the samosas.
  10. Season and Garnish: Sprinkle chaat masala, roasted cumin powder, and Kashmiri chili powder over the top. Garnish with pomegranate seeds, finely diced red onion, sev, and fresh cilantro leaves.
  11. Serve: Serve immediately to enjoy the contrasting textures and vibrant flavors.

Notes

  • Soaking chickpeas overnight reduces cooking time and ensures softness.
  • You can substitute canned chickpeas for a quicker version but reduce cooking time accordingly.
  • Use fresh chutneys for best flavor; store-bought chutneys work in a pinch.
  • The samosas can be homemade or store-bought; warm them before assembling if desired.
  • This dish is best served immediately to keep the samosa crisp.
  • Adjust chili powders to your heat preference.
