Ingredients
Chicken and Seasonings
- 1 lb chicken breast, cut into very small bite-sized pieces
- 1 tablespoon olive oil
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons buffalo sauce (for tossing cooked chicken)
Flatbread and Toppings
- 2 flatbreads (Stonefire brand recommended)
- 2 cups shredded mozzarella cheese
- ¼ cup buffalo sauce (for brushing flatbreads)
- 4 green onions, sliced (optional)
- ⅓ cup blue cheese or ranch dressing
Instructions
- Preheat Oven: Preheat your oven to 400°F (204°C) to ensure it’s ready for baking the flatbreads.
- Season Chicken: In a bowl, season the bite-sized chicken pieces with smoked paprika, garlic powder, onion powder, salt, and black pepper, coating evenly for full flavor.
- Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 7-10 minutes, stirring occasionally until the chicken is fully cooked and no longer pink inside.
- Toss Chicken in Sauce: Remove the skillet from heat and stir the cooked chicken with 2 tablespoons of buffalo sauce, ensuring every piece is well-coated.
- Prepare Flatbreads: Place the flatbreads on a baking sheet. Brush each flatbread thinly with the remaining ¼ cup buffalo sauce for a spicy base layer.
- Add Cheese and Chicken: Evenly sprinkle 2 cups shredded mozzarella cheese over the flatbreads, then distribute the buffalo chicken mixture on top of the cheese layer.
- Bake: Bake the flatbreads in the preheated oven for 10-13 minutes or until the cheese melts thoroughly, becomes bubbly, and the flatbreads turn golden brown.
- Finish and Serve: Remove from oven; drizzle with blue cheese or ranch dressing, sprinkle with sliced green onions if desired, then slice and serve immediately.
Notes
- Using Stonefire flatbreads provides the best texture, but other thin flatbreads can be substituted.
- Adjust buffalo sauce quantity for milder or spicier flavor according to preference.
- Blue cheese dressing pairs excellently, but ranch dressing is a great alternative.
- Chicken can be pre-cooked or shredded rotisserie chicken can be used for a quicker version.
- For a crispier crust, bake flatbreads on a preheated pizza stone.
