A tangy and melty twist on the classic grilled cheese sandwich, featuring sharp cheddar, creamy American cheese, tangy sauerkraut, and zesty Dijon mustard on seeded rye or sourdough bread. Perfect for a quick and flavorful lunch or snack.

  • Total Time: 10 minutes
  • Yield: 1 serving

Ingredients

Sandwich

  • 2 slices good seeded rye or sourdough bread
  • 1 tablespoon (15 grams) Dijon mustard
  • 2 slices (40 grams) organic American cheese
  • 1 ounce (28 grams) extra-sharp cheddar cheese, sliced thin
  • 1/3 cup (37 grams) sauerkraut, drained very well
  • 1 1/2 tablespoons (21 grams) salted butter, softened

Instructions

  1. Spread Mustard: Spread half of the Dijon mustard evenly on the inside of each slice of bread to add a sharp, tangy flavor base to the sandwich.
  2. Add Cheese: Place one slice of American cheese and half of the thinly sliced cheddar cheese on each slice of bread. Arrange them in a single layer to ensure even melting and rich cheesy bites.
  3. Layer Sauerkraut: Lay the well-drained sauerkraut on top of the cheese on the bottom slice of bread, infusing the sandwich with a tangy crunch.
  4. Assemble Sandwich: Top the sauerkraut with the other slice of bread, cheese side down, to close the sandwich.
  5. Butter the Bread: Spread half of the softened butter on the outside of the top slice of bread to create a golden crust when grilled.
  6. Cook First Side: Place the sandwich buttered side down in a preheated skillet over medium heat, allowing the bread to toast and the cheese to start melting.
  7. Butter Second Side: Spread the remaining butter on the outside of the top slice of bread (now facing up) while the first side cooks.
  8. Flip and Finish Cooking: Flip the sandwich halfway through cooking, adjusting the heat to prevent burning. Continue cooking until both sides are golden brown and the cheese is fully melted.
  9. Serve: Remove the sandwich from the skillet, cut it in half if desired, and serve immediately while hot and melty.

Notes

  • Make sure to drain the sauerkraut very well to avoid soggy bread.
  • Use a skillet or non-stick pan for even heat and easy flipping.
  • Adjust heat as needed to prevent burning while ensuring the cheese melts completely.
  • For a vegan version, substitute cheeses and butter with plant-based alternatives.
