Ingredients
For the Spicy Garlic Sauce
- 2 teaspoons sesame seeds
- 1 teaspoon minced garlic
- 1/4 cup chopped scallions
- 3 tablespoons low-sodium soy sauce
- 1 tablespoon sesame oil
- 1 teaspoon crushed red pepper flakes
- 1/2 teaspoon sugar
For the Vegetables
- 2 tablespoons olive oil
- 4 cups sliced mushrooms, such as shiitake or portabello
- 4 cups loosely packed baby spinach leaves
Instructions
- Toast the Sesame Seeds: Add the sesame seeds to a small sauté pan set over medium-low heat. Cook the seeds, moving them frequently to ensure even toasting, until they turn golden brown and fragrant, about 2-3 minutes.
- Crush the Toasted Seeds: Transfer the toasted sesame seeds to a cutting board and use a heavy knife to crush them into smaller pieces, releasing their flavor further for the sauce.
- Prepare the Spicy Garlic Sauce: In a bowl, whisk together the crushed sesame seeds with minced garlic, chopped scallions, low-sodium soy sauce, sesame oil, crushed red pepper flakes, and sugar. Set this spicy sauce mixture aside to let the flavors meld.
- Sauté the Mushrooms: Heat the olive oil in a saucepan or skillet over medium heat. Add the sliced mushrooms and cook for 5 to 7 minutes, stirring occasionally, until the mushrooms are golden brown and have released their moisture.
- Add Spinach and Sauce: Add the loosely packed baby spinach leaves to the skillet with the mushrooms. Pour the prepared spicy garlic sauce over the vegetables and continue cooking for an additional 5 minutes, until the spinach is wilted and everything is well coated with the sauce.
- Serve: Remove from heat and serve the sautéed mushrooms and spinach immediately as a flavorful vegetable side dish to complement your main course.
Notes
- Use low-sodium soy sauce to keep the sodium content moderate.
- Feel free to substitute mushrooms with cremini or button mushrooms if shiitake or portobello are unavailable.
- Adjust the amount of crushed red pepper flakes to suit your spice preference.
- For a nut-free option, omit the sesame seeds and sesame oil and substitute with additional olive oil.
- This dish pairs well with grilled meats, steamed rice, or noodles.
