Savory sautéed mushrooms cooked in garlic butter with a burst of umami flavor from optional Worcestershire sauce, balsamic vinegar, soy sauce, or white wine. This easy and quick recipe delivers golden-brown, perfectly seared mushrooms enhanced with fresh herbs, perfect as a side dish or topping.

  • Total Time: 14 minutes
  • Yield: 8 servings

Ingredients

Mushrooms

  • 2 lb mushrooms (any variety; cut large ones in half)

Fats and Oils

  • 2 Tablespoons butter
  • 1 Tablespoon avocado oil

Flavorings

  • 3 cloves garlic (minced)
  • 1½ Tablespoons Worcestershire sauce OR 1½ Tablespoons balsamic vinegar OR 1½ Tablespoons soy sauce OR 1½ Tablespoons white wine

Seasonings and Garnish

  • Salt and pepper (to taste)
  • Chopped parsley or other herbs (for garnish)

Instructions

  1. Prep the mushrooms: Wash and prepare the mushrooms thoroughly. Cut any large mushrooms in half to ensure even cooking and consistent size.
  2. Dry sauté the mushrooms: Heat a pan over medium-high heat and add the mushrooms in a single layer without any oil or butter. Stir occasionally as the mushrooms begin to release their liquid, cooking for about 3 to 4 minutes. Drain off the liquid or allow it to continue cooking until it evaporates completely. This step concentrates the mushroom flavor and allows for a golden brown sear.
  3. Add garlic and fats: Once the mushroom liquid has evaporated, add the avocado oil, butter, minced garlic, and your choice of flavor enhancer (Worcestershire sauce, soy sauce, balsamic vinegar, or white wine). Continue to sauté the mushrooms, stirring occasionally, until they turn a rich golden brown, about 3 to 4 minutes more.
  4. Season and serve: Remove the pan from heat. Season the mushrooms with salt and pepper to taste. Garnish with chopped parsley or herbs of your choice and serve immediately for the best flavor and texture.

Notes

  • Using a single layer of mushrooms while sautéing ensures even browning and prevents steaming.
  • Choose your preferred acid or umami enhancer: Worcestershire sauce, balsamic vinegar, soy sauce, or white wine to vary the flavor profile.
  • Dry sautéing is key to develop concentrated mushroom flavor and a golden sear.
  • Can be served as a side dish, topping for steaks or burgers, or mixed into pasta and grains.
  • For a dairy-free option, substitute butter with additional avocado oil or a vegan butter alternative.
