Ingredients
Dry Ingredients
- 3/4 cup all-purpose flour
- 1/2 cup almond flour (or additional all-purpose flour)
- 1 teaspoon baking powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt (optional)
Wet Ingredients
- 1 cup whole milk cottage cheese
- 3 large eggs
- 1/4 cup milk
- 3 Tablespoons avocado oil
Add-ins and Toppings
- 3/4 cup finely chopped green bell pepper or jalapeño
- 1 Tablespoon finely chopped chives (or green onions, plus extra for garnish)
- 1/4 cup grated Parmesan cheese
- Hot honey (for drizzling)
- Fried or poached egg (optional topping)
- Smoked salmon (optional topping)
- Sautéed spinach or arugula (optional topping)
- Avocado slices (optional topping)
- Roasted tomatoes or grilled mushrooms (optional topping)
- Hot sauce or herby yogurt sauce (optional topping)
Instructions
- Whisk Dry Ingredients: In a large bowl, combine the all-purpose flour, almond flour, baking powder, garlic powder, onion powder, black pepper, and optional salt. Whisk thoroughly to evenly distribute the dry seasonings.
- Blend Liquid Ingredients: In a blender, add the whole milk cottage cheese, eggs, and milk. Blend until the mixture becomes smooth and fully combined.
- Add Oil: Stir the avocado oil into the smooth liquid mixture until blended.
- Combine Batter: Pour the blended wet ingredients into the bowl with the dry ingredients. Gently stir until just combined. The batter will be thick in consistency.
- Add Veggies to Batter: Fold in the finely chopped green bell pepper (or jalapeño) and chives to the batter, mixing them evenly without over-stirring.
- Fold in Parmesan: Gently fold the grated Parmesan cheese into the batter to distribute the cheesy flavor throughout.
- Heat Waffle Iron: Preheat your waffle iron according to manufacturer instructions, ensuring it is hot and ready for cooking.
- Scoop Batter and Cook: Using a 1/3 cup measuring scoop, spoon batter into each waffle cavity. Close the waffle iron and cook for 3 to 6 minutes, depending on your waffle iron’s heat and cooking speed, until waffles are golden and cooked through.
- Serve: Remove waffles carefully and serve immediately. Top with your choice of hot honey, salsa, or hot sauce. Optionally add toppings such as fried or poached eggs, smoked salmon, sautéed greens, avocado slices, roasted tomatoes, grilled mushrooms, or a herby yogurt sauce for extra flavor.
Notes
- You can substitute almond flour with all-purpose flour for a more traditional waffle texture.
- The batter is thick; do not add extra liquid, just fold gently to maintain structure.
- Cooking time varies with different waffle irons; watch for golden brown to ensure doneness.
- Feel free to customize toppings to add more protein or vegetables as desired.
- If you don’t have a blender, blend cottage cheese, eggs, and milk with a hand mixer until smooth.
