Ingredients
Seafood, Lasagna, and Cheese
- 12 lasagna noodles
- 1 pound shrimp
- 1 pound crab meat or imitation crab
- 12 ounces quartered scallops
- 2 cups mozzarella cheese
- 2 cups parmesan cheese
Sauce
- 18 ounces canned clam chowder
- 1 cup heavy whipping cream
- 3 tablespoons lemon juice
- ½ cup parmesan cheese
- 1 teaspoon salt
- ½ teaspoon pepper
Cheese Mixture
- 16 ounces ricotta cheese
- 1 egg
- 2 teaspoons minced garlic
- ½ cup fresh chopped parsley
- ½ teaspoon salt
Instructions
- Cook the noodles. Boil the 12 lasagna noodles following the package instructions until al dente. Drain thoroughly and set aside to cool.
- Preheat oven and prepare dish. Set your oven to 350°F (175°C). Spray a 9×13-inch baking dish with nonstick cooking spray to prevent sticking.
- Cook seafood. In a large skillet over medium heat, sauté the shrimp and scallops until the shrimp turns pink and the scallops are opaque, about 4-5 minutes. Stir in the crab meat, warming it through, then remove from heat.
- Mix shredded cheeses. Combine the 2 cups mozzarella and 2 cups parmesan cheese in a bowl and set aside.
- Prepare the sauce. In a separate bowl, whisk together clam chowder, heavy cream, lemon juice, parmesan cheese, salt, and pepper until smooth and well incorporated.
- Make ricotta mixture. In a medium bowl, mix the ricotta cheese, egg, minced garlic, chopped parsley, and salt until creamy and evenly blended.
- Assemble the lasagna – first layer. Pour a thin layer of the sauce into the bottom of the prepared baking dish. Arrange a layer of cooked noodles on top. Spread one-third of the ricotta mixture evenly over noodles, then one-third of the seafood mixture, followed by one-third of the shredded cheese blend.
- Assemble the lasagna – repeat layers. Repeat the layering process two more times: sauce, noodles, ricotta mixture, seafood, and shredded cheese, finishing with the cheese on the topmost layer.
- Bake covered. Cover the dish with foil and bake in the preheated oven for 30 minutes to heat through and meld flavors.
- Bake uncovered. Remove the foil and bake for an additional 10 minutes to allow the cheese on top to brown and become bubbly.
- Rest before serving. Take the lasagna out of the oven and let it cool for about 10 minutes to set, making it easier to cut and serve.
Notes
- Use fresh seafood when possible for the best flavor, or frozen if fresh is unavailable.
- Ensure the lasagna noodles are not overcooked to prevent mushy layers.
- Covering during the initial bake prevents the top from drying out.
- Letting the lasagna rest before serving helps the layers to set and enhances texture.
- If you prefer, substitute imitation crab with real crab meat for a more authentic taste.
