Ingredients
Potatoes and Oil
- 5 large russet potatoes (washed and dried)
- 1/3 cup vegetable oil
Seasonings and Toppings
- 5 cloves garlic (minced)
- 1 cup grated Parmesan cheese
- 1 Tbsp cornstarch
- 2 tsp black pepper
- 1 1/2 tsp kosher salt
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp chili powder
- 1/4 cup minced fresh cilantro
Instructions
- Prepare Potatoes: Wash and dry the russet potatoes thoroughly. Slice one potato in half lengthwise, then slice each half into 4 equally sized wedges. Repeat this process with all potatoes to ensure uniform cooking.
- Preheat Oven: Heat your oven to 400°F and line several baking sheets with parchment paper to prevent sticking and facilitate easy cleanup.
- Mix Potatoes and Oil: Place the potato wedges in a large mixing bowl. Add the vegetable oil and minced garlic, stirring well to coat every wedge evenly.
- Add Seasonings: To the bowl, add grated Parmesan cheese, cornstarch, black pepper, kosher salt, onion powder, paprika, chili powder, and the minced fresh cilantro. Mix thoroughly, ideally using your hands, to ensure the seasonings adhere well to all the wedges.
- Arrange for Baking: Spread the seasoned potato wedges evenly on the prepared baking sheets, spacing them out to allow hot air circulation. Position the wedges skin side down with the pointed ends facing upward for optimal crispiness.
- Bake Initial Phase: Place the baking sheets in the preheated oven and bake for 15 minutes at 400°F to begin cooking and crisping the wedges.
- Continue Baking: Without removing the potatoes, reduce the oven temperature to 375°F and bake for an additional 40 minutes or until the wedges are golden brown and crispy to your liking.
- Serve: Once baked, serve the hot, seasoned potato wedges immediately with your favorite dipping sauce for a delicious snack or side dish.
Notes
- For extra crispiness, make sure not to overcrowd the baking sheets to allow proper air circulation.
- Using russet potatoes is ideal, as their high starch content results in a fluffy interior and crispy exterior.
- You can customize the spice blend by adjusting the chili powder to your preferred heat level.
- These wedges are best enjoyed fresh out of the oven to retain their crisp texture.
- For a dairy-free option, omit Parmesan cheese and add nutritional yeast for a cheesy flavor.
