These Sheet Pan Cabbage Burgers are a delicious and unique twist on classic burgers, using roasted cabbage steaks as the base instead of buns. Topped with juicy smashed beef patties, melted American cheddar cheese, and optionally savory Guinness caramelized onions, this recipe offers a flavorful, low-carb alternative that’s easy to prepare and perfect for a satisfying meal.

  • Total Time: 50 minutes
  • Yield: 4 servings

Ingredients

Burgers and Cabbage

  • 1 medium Head of green cabbage
  • 4 tbsp Olive oil, divided
  • Kosher salt and pepper to taste
  • 1.25 lbs Ground beef
  • 4 slices American cheddar cheese
  • Ketchup, for garnish
  • Pickles, for garnish

Guinness Caramelized Onions (optional)

  • 2 tbsp Unsalted butter
  • 1 large Yellow onion, thinly sliced
  • 1/3 cup Guinness beer

Instructions

  1. Preheat and prepare baking sheet: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to ensure easy cleanup and prevent sticking.
  2. Slice and roast cabbage: Cut 1 inch off the top of the cabbage head and then slice it into 4 to 5 half-inch thick steaks. Arrange the cabbage steaks on the prepared baking sheet, brush with 3 tablespoons of olive oil, and season with kosher salt and pepper. Roast in the oven for approximately 20 minutes until tender and slightly caramelized.
  3. Make Guinness caramelized onions: While the cabbage roasts, melt 2 tablespoons of unsalted butter in a skillet over medium heat. Add the thinly sliced yellow onions, seasoning with kosher salt and pepper. Cook the onions for about 10 minutes until softened. Pour in the Guinness beer and continue cooking for another 10 minutes, stirring occasionally, until onions are deeply caramelized. Remove from heat and set aside.
  4. Form beef patties and cook on cabbage: In a large bowl, combine the ground beef with 1 tablespoon olive oil, kosher salt, and pepper. Form the beef mixture into burger patties. Remove the cabbage from the oven, place a beef patty on top of each cabbage steak, and gently press down to create a smash burger effect. Return the baking sheet to the oven and cook for about 8 minutes until beef is cooked through.
  5. Add cheese and melt: Take the baking sheet out of the oven and place a slice of American cheddar cheese on each beef patty. Return to the oven just long enough to melt the cheese, about 1 to 2 minutes.
  6. Serve: Transfer the cabbage burgers to a serving platter. Top with the Guinness caramelized onions, and garnish with ketchup and pickles as desired. Serve hot and enjoy.

Notes

  • If you prefer a more traditional burger bun, this recipe can be adapted by serving the beef patties on buns alongside the roasted cabbage.
  • The Guinness caramelized onions add rich flavor but can be omitted for a more straightforward burger.
  • Use a meat thermometer to ensure the beef patties reach a safe internal temperature of 160°F (71°C).
  • For extra crunch, lightly toast pickles before serving if desired.
  • Adjust seasoning throughout to taste, particularly salt and pepper.
