Ingredients
Seafood and Meat
- 1 pound large shrimp (peeled & deveined, tails on optional)
- 12 ounces smoked sausage (sliced into coins)
Vegetables
- 3 ears corn (cut into fourths)
- 1 pound baby potatoes (halved if large)
Seasonings and Oils
- 4 tablespoons olive oil (divided)
- 3 tablespoons unsalted butter (melted)
- 4 cloves garlic (minced)
- 1 ½ tablespoons Old Bay seasoning (divided)
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne (optional for heat)
- 1 teaspoon kosher salt (or more to taste)
- 1 lemon (sliced into wedges)
- 2 tablespoons parsley (chopped for garnish)
Instructions
- Preheat oven: Preheat the oven to 400°F (200°C) convection. Line sheet pans with foil or parchment paper for easy cleanup.
- Boil potatoes and corn: Boil the potatoes in salted water for 10–12 minutes, until just fork-tender. Add the corn during the last 5 minutes of cooking to ensure it cooks through without becoming mushy. Drain well.
- Prepare sheet pan: Transfer the potatoes, corn, and sliced sausage to a large sheet pan, or divide between two half sheet pans for even cooking.
- Season vegetables and sausage: Drizzle 2 tablespoons of olive oil over the ingredients on the pan. Add minced garlic, 1 tablespoon Old Bay seasoning, smoked paprika, cayenne pepper (if using), and kosher salt. Toss everything well to coat the ingredients evenly with the seasonings.
- Roast initial ingredients: Spread the mixture into a single, even layer on the sheet pan. Roast in the preheated oven for 12–15 minutes, stirring halfway through to ensure even cooking and browning.
- Season shrimp: While the sausage and veggies roast, toss the shrimp in a separate bowl with 1 tablespoon olive oil and ½ teaspoon Old Bay seasoning to evenly coat the shrimp with flavor.
- Add shrimp to sheet pan: After the initial roasting, add the seasoned shrimp to the sheet pan, gently mixing them with the other ingredients to combine without overcrowding.
- Finish roasting: Return the sheet pan to the oven and roast for an additional 5–6 minutes, or until the shrimp turn pink and are cooked through.
- Garnish and serve: Remove the sheet pan from the oven. Drizzle the melted butter evenly over the entire pan. Squeeze fresh lemon juice on top and sprinkle with chopped parsley for brightness and fresh flavor. Serve immediately.
Notes
- Boiling the potatoes and corn before roasting helps ensure even cooking and tender results without overcooking the shrimp or sausage.
- Adjust cayenne pepper according to your heat preference or omit for a milder dish.
- Using foil or parchment paper on the sheet pan simplifies cleanup and prevents sticking.
- To keep shrimp tender, avoid overcooking; they cook quickly in just 5–6 minutes during roasting.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days and reheated gently in the oven or microwave.
