Ingredients
Citrus Marinade
- ¾ cup fresh lime juice (180 mL)
- ¼ cup fresh lemon juice (60 mL)
- ¼ cup fresh orange juice (60 mL)
Main Ingredients
- 1 pound shrimp, peeled and deveined (454 g)
- 2 Roma tomatoes, seeded and diced (182 g)
- ⅓ cup finely chopped red onion (42 g)
- ⅓ cup chopped fresh cilantro (12 g)
- 1 jalapeño, seeded and diced (22 g)
- ½ teaspoon salt
- 1 avocado, diced (175 g)
To Serve
- Tortilla chips
Instructions
- Prepare the citrus juice mixture: In a medium mixing bowl, combine the fresh lime juice, lemon juice, and orange juice. Reserve ½ cup of this citrus mixture separately and set aside for later use.
- Marinate the shrimp: Cut the shrimp into ½-inch pieces and stir them into the remaining juice mixture, ensuring the shrimp is fully submerged by pushing it down. Cover the bowl and refrigerate for at least 30 minutes, stirring occasionally. The shrimp will turn pink and opaque when ready. After marinating, strain and discard the liquid.
- Mix the ceviche ingredients: Return the marinated shrimp to the same mixing bowl. Add the diced Roma tomatoes, finely chopped red onion, chopped fresh cilantro, diced jalapeño, salt, and the reserved ½ cup of juice mixture. Stir well to combine. Cover and refrigerate the mixture for an additional 30 minutes to 4 hours, stirring occasionally to meld flavors.
- Add avocado and serve: Just before serving, gently fold in the diced avocado to preserve its texture. Serve the shrimp ceviche chilled alongside tortilla chips for scooping.
Notes
- Ensure the shrimp is fresh and properly cleaned before marinating.
- Marinating time can vary, but shrimp should remain in the citrus juice long enough to turn fully opaque for safety.
- Adjust the jalapeño amount to suit your desired spice level or omit for a milder flavor.
- The ceviche is best served fresh but can be refrigerated for up to 4 hours after the second marination step.
- Use ripe avocado for the best creamy texture.
- Serve chilled for maximum freshness and flavor.
