Delicious and flavorful Shrimp Fajitas made with marinated shrimp, sautéed bell peppers and onions, served warm in tortillas with fresh cilantro and avocado slices. Ready in just 24 minutes, this quick and easy recipe is perfect for a satisfying weeknight dinner.

  • Total Time: 24 minutes
  • Yield: 4 servings

Ingredients

Shrimp and Marinade

  • 1 pound large shrimp (peeled and deveined, tails removed)
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • 3 tablespoons fajita seasoning

Vegetables

  • 2 bell peppers (thinly sliced)
  • 1 red onion (thinly sliced)
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice

To Serve

  • 8 tortillas (corn or flour)
  • ¼ cup fresh cilantro (chopped)
  • 1 avocado (thinly sliced)

Instructions

  1. Marinate the Shrimp: In a large bowl, combine the shrimp with 1 tablespoon olive oil, 1 tablespoon lime juice, and 3 tablespoons fajita seasoning. Toss well to coat and set aside to marinate while you prepare the vegetables.
  2. Sauté the Vegetables: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the thinly sliced bell peppers and red onion. Cook, stirring occasionally, for 10-12 minutes until the vegetables are tender and slightly caramelized.
  3. Remove Vegetables: Transfer the cooked peppers and onions from the skillet to a clean plate or cutting board to make space for the shrimp.
  4. Cook the Shrimp: Add the marinated shrimp to the hot skillet. Cook for about 2 minutes on each side until the shrimp turn pink and are cooked through. Then push the cooked shrimp to one side of the skillet.
  5. Combine and Finish: Return the sautéed peppers and onions to the skillet with the shrimp. Add 1 tablespoon lime juice and stir everything together to combine and warm through.
  6. Serve: Remove the skillet from heat. Warm the tortillas, then fill them with the shrimp and vegetable mixture. Top each fajita with fresh chopped cilantro and slices of avocado. Serve immediately and enjoy!

Notes

  • For extra flavor, you can add a splash of fresh lime juice just before serving.
  • Use corn tortillas for a gluten-free option.
  • Adjust fajita seasoning quantity based on your preferred spice level.
  • Ensure shrimp is cooked thoroughly but avoid overcooking to keep them tender.
  • Add sour cream or shredded cheese as additional toppings if desired.
