Ingredients
Tortillas & Toppings
- 6 soft corn tortillas
- 1/2 cup cotija cheese (or feta)
- 1/2 cup cilantro, chopped (for garnish)
Oregano Lime Slaw
- 2 cups green cabbage, shredded
- 1 lime, juiced
- 2 teaspoons dried oregano
- Pinch of salt
Cilantro Avocado Sauce
- 1/2 cup mayonnaise
- 1/2 avocado
- 1/2 cup cilantro
- 1 lime, juiced
- Pinch of cayenne pepper (optional)
Shrimp
- 1 pound medium-sized shrimp, peeled
- 1 teaspoon sugar
- Salt and pepper to taste
- 1 tablespoon vegetable oil
- Oil for heating tortillas (about 1-2 teaspoons)
Instructions
- Prepare Tortillas: In a small fry pan, heat a little oil over medium heat. Lightly salt the corn tortillas and warm them in the pan until they are soft and slightly crisp. Set aside.
- Make Oregano Lime Slaw: In a bowl, toss together the shredded green cabbage, lime juice, dried oregano, and a pinch of salt. Mix well to combine all flavors. Set aside to let it marinate slightly.
- Prepare Cilantro Avocado Sauce: Combine the mayonnaise, avocado, cilantro, lime juice, and optional cayenne pepper in a blender. Blend thoroughly until the sauce is thick and smooth.
- Cook Shrimp: Peel the shrimp and pat them dry with paper towels. Season the shrimp with salt, pepper, and sugar. Heat vegetable oil in a skillet over medium-high heat and cook the shrimp until they curl and turn pink, approximately 2-3 minutes per side.
- Assemble Tacos: Layer the oregano lime slaw, cooked shrimp, and cilantro avocado sauce onto the warmed corn tortillas. Top each taco with a sprinkle of cotija cheese and additional cilantro as desired.
Notes
- If you prefer a spicier kick, increase the cayenne pepper in the sauce or add a squeeze of fresh hot sauce to the shrimp while cooking.
- For a dairy-free option, substitute cotija cheese with a crumbled vegan cheese or omit entirely.
- Medium shrimp can be replaced with large shrimp or even small scallops for variation.
- Make sure to pat the shrimp dry before cooking to ensure a nice sear and prevent steaming.
- Soft corn tortillas work best for wrapping and maintaining the delicate texture of the tacos.
