Ingredients
Salad
- 8.8 oz. block halloumi, sliced 1/3″-1/2″ thick
- Olive oil, for brushing
- 5 oz. spring greens
- 1 (15 oz.) can chickpeas, drained
- 1 cup halved grape tomatoes
- 1 cup sliced mini cucumbers
- 1 cup pitted Kalamata olives
- 1/4 cup thinly sliced red onion
- Kosher salt, to taste
Dressing
- Homemade Creamy Balsamic Dressing (amount as desired for drizzling)
Instructions
- Preheat the Pan: Heat a large sauté pan, cast iron griddle, or grill over medium-high heat until hot to ensure a good sear on the halloumi.
- Prepare Halloumi: Slice the halloumi cheese into 1/3″ to 1/2″ thick slices using a sharp knife. Brush both sides lightly with olive oil to prevent sticking and aid browning.
- Grill First Side: Place the halloumi slices cut side down on the hot pan. Cook for 2-3 minutes until a dark golden-brown crust forms, signaling perfect caramelization.
- Flip and Season: Gently flip the halloumi slices over and cook the other side for another 2-3 minutes. Sprinkle lightly with kosher salt while cooking to enhance flavor.
- Assemble Salad: Meanwhile, spread the spring greens evenly on a large serving platter. Top with drained chickpeas, halved grape tomatoes, sliced cucumbers, pitted Kalamata olives, and thinly sliced red onion to build layers of texture and flavor.
- Add Halloumi and Dressing: Arrange the grilled halloumi slices on top of the salad ingredients. Drizzle generously with homemade creamy balsamic dressing to bring all components together.
- Serve: Serve immediately while the halloumi is warm and enjoy this fresh, hearty salad perfect for any occasion.
Notes
- Halloumi cheese is naturally firm and well suited for grilling or frying; avoid slicing too thin to prevent falling apart.
- If you prefer, use a grill pan or outdoor grill for additional smoky flavor.
- Customize the salad by adding fresh herbs like mint or basil for an aromatic touch.
- Leftover dressing can be stored in an airtight container in the fridge for up to a week.
- For a vegan version, substitute halloumi with grilled tofu or tempeh and use a dairy-free dressing.
