This Slow Cooker Chicken and Stuffing recipe offers a comforting and easy meal that combines tender, flavorful chicken with classic stovetop stuffing cooked right in the slow cooker. Perfect for busy weeknights, it yields a creamy, savory dish that requires minimal hands-on time and delivers maximum taste.

  • Total Time: 3 hours 25 minutes
  • Yield: 4 servings

Ingredients

Chicken and Sauce

  • 3 boneless skinless chicken breasts (about 1½ lbs)
  • 1⅓ cups chicken broth
  • ½ tsp Italian seasoning
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 10.5 oz can cream of chicken soup
  • 10.5 oz can cream of celery soup
  • 2 celery stalks, finely chopped

Stuffing

  • 2 boxes Stovetop stuffing mix (6 oz each)
  • 6 Tbsp salted butter, melted

Instructions

  1. Prepare the chicken: If the chicken breasts are extra thick, slice each breast in half horizontally to ensure even cooking and easier shredding.
  2. Layer chicken in slow cooker: Place the chicken breasts in an even layer at the bottom of the slow cooker.
  3. Add seasonings and vegetables: Pour 1 can of chicken broth over the chicken. Sprinkle in Italian seasoning, black pepper, garlic powder, and onion powder evenly over the meat. Add finely chopped celery stalks on top.
  4. Add soups: Spread one can of cream of chicken soup and one can of cream of celery soup evenly over the chicken and celery mixture.
  5. Cook chicken: Cover the slow cooker and cook on LOW for 5 hours or on HIGH for 3 hours until the chicken is very tender and shreds easily.
  6. Shred chicken: Remove the chicken breasts from the slow cooker and shred or chop them into bite-sized pieces. Return the shredded chicken to the slow cooker and stir it thoroughly into the sauce to coat evenly.
  7. Add stuffing mix: Sprinkle both boxes of Stovetop stuffing mix evenly over the chicken and sauce. Drizzle the melted butter evenly over the stuffing. Gently press the stuffing into the liquid but do not stir it in.
  8. Cook stuffing: Cover the slow cooker again and cook for an additional 10 minutes, allowing the stuffing to absorb the liquid and become soft and fluffy.
  9. Serve: Serve immediately by scooping portions that include chicken, stuffing, and sauce together for a hearty, comforting meal.

Notes

  • If chicken breasts are very thick, slicing them horizontally promotes even cooking.
  • Do not stir the stuffing mix into the chicken mixture; just press it gently to keep texture light and fluffy.
  • Substitute low-sodium soup and broth if aiming for lower sodium content.
  • Adding extra celery or herbs can enhance flavor and texture.
  • Butter can be substituted with olive oil or a dairy-free alternative for dietary preferences.
