Ingredients
Chicken and Seasoning
- 2.25 pounds boneless skinless chicken breasts
- 1 ½ (1 oz) packets fajita seasoning mix
- 1 cup salsa
Vegetables
- 3 large bell peppers (mix of colors), deseeded and thickly sliced
- 1 large red onion, halved and thickly sliced
- 1 lime, juiced
Garnish
- Fresh cilantro, for garnish
Instructions
- Prepare the slow cooker: Place the boneless skinless chicken breasts at the bottom of your slow cooker pot. Add the fajita seasoning mix evenly over the chicken, then pour in 1 cup of salsa. Cover with the lid.
- Cook the chicken: Set your slow cooker to LOW and cook for 4-6 hours, or set it to HIGH and cook for 3-4 hours. Cook until the chicken is thoroughly cooked and tender enough to shred easily.
- Add vegetables: During the last hour of cooking, add the sliced bell peppers and red onion to the slow cooker. Squeeze fresh lime juice over the top. Cover again and continue cooking until the vegetables reach your desired tenderness.
- Shred the chicken: Remove the cooked chicken breasts from the slow cooker and place on a chopping board. Slice into strips or shred the chicken with two forks into smaller bite-sized pieces.
- Combine and finish: Return the sliced or shredded chicken back into the slow cooker and stir it together with the cooked bell peppers and onions to mix all the flavors.
- Garnish and serve: Garnish the chicken fajitas with freshly chopped cilantro. Serve hot with warm flour tortillas and your preferred sides such as sour cream, guacamole, or cheese. Enjoy your delicious slow cooker chicken fajitas!
Notes
- For an extra smoky flavor, consider adding a teaspoon of smoked paprika to the fajita seasoning.
- You can substitute chicken breasts with boneless skinless chicken thighs for juicier results.
- If you prefer your vegetables crisper, add them during the last 30 minutes of cooking instead of the last hour.
- To make this recipe gluten-free, use gluten-free fajita seasoning and serve with gluten-free tortillas.
