This Slow Cooker Ground Beef Taco Casserole is a hearty, flavorful, and easy-to-make meal that combines seasoned ground beef, black beans, corn, and salsa layered with tortilla chips and melted Mexican cheese. Perfect for busy days, this hands-off casserole cooks in a slow cooker, requiring no pre-browning of beef, and delivers a comforting Mexican-inspired dish that’s great for families and taco lovers.

  • Total Time: 2 hours 20 minutes to 4 hours 35 minutes depending on slow cooker setting
  • Yield: 6 servings

Ingredients

Main Ingredients

  • 1.5 lbs Ground beef
  • 1 Packet of taco seasoning
  • 1 (14 oz) Can of fire roasted diced tomatoes
  • 2 tbsp Apple cider vinegar
  • 1 (14 oz) Can of black beans, rinsed and drained
  • 1 cup Frozen corn
  • 1.5 cups Salsa
  • 1 cup Shredded Mexican Blend cheese
  • 6 oz Tortilla chips (about 1/2 a bag)
  • 1/3 cup Freshly chopped cilantro for garnish

Instructions

  1. Prepare and cook the beef: Place the raw ground beef into the slow cooker with the taco seasoning, apple cider vinegar, and fire roasted diced tomatoes. Break the beef into small pieces to ensure even cooking. Cook on high for 2 hours or low for 4 hours until the beef is fully cooked and tender.
  2. Add additional ingredients: Carefully remove the lid and stir in the rinsed black beans, frozen corn, salsa, half of the shredded cheese, and the tortilla chips. Stir gently to combine, being careful to avoid breaking the chips too much to maintain some texture.
  3. Top and melt the cheese: Sprinkle the remaining shredded Mexican cheese on top of the mixture. Return the lid to the slow cooker and set it to high. Cook for an additional 15 to 30 minutes, or until the cheese is fully melted and bubbly.
  4. Garnish and serve: Once the cheese has melted, remove the casserole from the slow cooker. Garnish with freshly chopped cilantro and serve with optional toppings like avocado, guacamole, chopped onion, sour cream, or jalapeños for added flavor and texture.

Notes

  • No need to brown the ground beef prior to cooking — the slow cooker will do all the work.
  • Be gentle when stirring after adding the chips to preserve their texture.
  • Additional toppings such as sour cream, avocado, jalapeños, or guacamole make great complements to the casserole.
  • This recipe works well on both high and low slow cooker settings depending on your schedule.
  • Use fire roasted diced tomatoes for added smoky flavor.
