Ingredients
Beef and Seasonings
- 4 lbs boneless chuck roast beef
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 2 teaspoons cumin
- 2 teaspoons chili powder
- 1 teaspoon oregano
- 1 ½ teaspoons kosher salt (or to taste)
- 1 teaspoon black pepper
- 2 garlic cloves, finely minced
Other Ingredients
- 19 ounces red enchilada sauce
- 1 lime, juiced
- Oil, for searing meat
- Corn tortillas, for serving
- Guacamole, for serving
Instructions
- Heat the skillet: Heat some oil in a heavy skillet over medium-high heat to prepare for searing the meat.
- Sear the beef: Season the chuck roast with salt and pepper on both sides. Add it to the skillet and cook for about 7 minutes on each side until browned.
- Combine in slow cooker: Remove the seared chuck roast from the skillet and place it in the slow cooker. Add 1 ½ teaspoons salt, 1 teaspoon black pepper, onion powder, garlic powder, cumin, oregano, chili powder, the red enchilada sauce, minced garlic, and lime juice.
- Slow cook the beef: Cover the slow cooker and cook on high for 4 hours or on low for 6 hours until the meat is tender and easily shredded.
- Shred the beef: Once cooked, remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and stir to absorb the juices. Check and adjust seasoning if needed.
- Serve: Warm the corn tortillas and serve the shredded beef topped with guacamole, additional lime wedges, and hot sauce if desired. Enjoy your flavorful shredded beef tacos!
Notes
- For extra flavor, sear the beef well to develop a deep crust before slow cooking.
- If you prefer spicier tacos, add extra chili powder or a dash of cayenne.
- This recipe works well with other cuts of beef suitable for slow cooking, like brisket or rump roast.
- Leftover shredded beef can be stored in the fridge for up to 3 days or frozen for up to 3 months.
- Use warm corn tortillas for an authentic taco experience; flour tortillas can be substituted if preferred.
