Ingredients
Beef Mixture
- 1.5 pounds ground beef, 80/20 fat ratio
- 1 teaspoon salt
- ½ teaspoon black pepper
Tortillas and Cheese
- 6 (6-inch) small flour tortillas
- 6 slices American cheese, or sliced cheese of choice
Toppings
- Shredded lettuce
- Minced onion
- Dill pickles
- Burger sauce
Instructions
- Prepare the beef mixture: In a medium bowl, combine the ground beef with salt and black pepper, mixing gently to combine the seasonings evenly throughout the meat.
- Assemble the tacos: Lay the tortillas flat on parchment paper or a sheet pan. Divide the seasoned beef mixture evenly onto each tortilla, spreading it into a thin layer that completely covers the surface of the tortilla. For added flavor, press a thin layer of minced onion on top of the beef before cooking if you like grilled onions.
- Preheat the skillet: Heat a skillet over high heat until it is very hot, and lightly brush the surface with oil to prevent sticking.
- Cook the smash burger tacos: Place each tortilla beef-side down on the hot skillet. Use a spatula to press and flatten the beef further into the tortilla, creating a crisp and thin layer. Cook for 1-2 minutes on the first side until browned and crispy.
- Flip and add cheese: Carefully flip each taco over. Immediately top with a slice of American cheese, cover the skillet with a lid, and let the cheese melt – this should take just a few seconds.
- Finish with toppings: Remove the tacos from the skillet and top with shredded lettuce, minced onion, dill pickles, and a generous drizzle of your favorite burger sauce. Serve warm and enjoy!
Notes
- Use 80/20 ground beef for the best fat content to achieve juicy, flavorful burgers.
- Pressing the beef thin ensures quick cooking and crispy texture.
- If you prefer gluten-free or low-carb options, substitute the flour tortillas with corn tortillas or lettuce wraps.
- You can customize the toppings by adding tomatoes, cheese varieties, or different sauces according to your preference.
- Cook only as many tacos as fit comfortably in your skillet to avoid steaming instead of crisping the meat.
