Ingredients
Potatoes
- 2 ½ pounds red potatoes (about 10-12, rinsed and scrubbed)
Garlic Herb Sauce
- 4 tablespoons melted butter (or oil if dairy-free)
- 4 cloves garlic (finely minced)
- 1 ½ teaspoons fresh rosemary (finely chopped)
- 1 ½ teaspoons fresh thyme (finely chopped)
- 1 ½ teaspoons salt (to taste)
- ¼ teaspoon pepper (to taste)
- Fresh parsley (finely chopped, optional, for garnish)
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the smashed potatoes.
- Boil Potatoes: Place the red potatoes in a large pot and cover with about 1 inch of water. Add a pinch or two of salt and bring to a boil. Reduce the heat to medium-low and maintain a rapid simmer. Cook the potatoes for 15-20 minutes until they are fork tender.
- Dry Potatoes: Remove the cooked potatoes from the pot and thoroughly dry them to ensure they crisp up during baking.
- Smash Potatoes: Arrange the potatoes on a baking sheet lined with parchment paper. Use a potato masher or large fork to smash each potato twice in a criss-cross pattern. The thinner you smash them, the crispier they will become.
- Make Garlic Herb Sauce: In a small bowl, whisk together the melted butter (or oil), finely minced garlic, chopped rosemary, thyme, salt, and pepper.
- Drizzle Sauce: Drizzle the garlic herb sauce evenly over each smashed potato, making sure they’re well coated.
- Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the edges of the potatoes are golden brown and crispy.
- Garnish and Serve: Remove from oven, sprinkle with freshly chopped parsley if desired, and serve immediately while hot and crispy.
Notes
- For a dairy-free version, substitute melted butter with olive oil or your preferred cooking oil.
- Smashing the potatoes thinner will help achieve extra crispiness.
- Fresh herbs impart the best flavor; dried herbs can be used in a pinch but reduce quantities by half.
- Ensure potatoes are very dry before smashing to prevent sogginess.
- This recipe is perfect as a side for roasted meats, grilled vegetables, or a fresh salad.
