Ingredients
Sweet Potatoes
- 3 medium sweet potatoes
For Roasting and Topping
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1 tablespoon pure maple syrup
- 1/2 teaspoon ground cinnamon
- 1/4 cup candied pecans or pecans (optional)
- Flaky sea salt, to taste
- 1 cup mini marshmallows
Instructions
- Preheat Oven: Preheat the oven to 450 degrees F. Grease a large baking sheet with nonstick cooking spray and set aside.
- Slice Potatoes: With a sharp knife, cut the sweet potatoes into thick slices, about 1 1/2-inch thick to ensure even cooking.
- Boil Potatoes: Bring a large pot of water to a boil. Gently add the sweet potato slices into the boiling water and cook until fork tender, about 15 to 20 minutes. Drain thoroughly to avoid sogginess.
- Smashed Potatoes: Arrange the cooked sweet potato slices on the prepared baking sheet. Use a fork or the bottom of a glass to lightly smash each piece without breaking them apart to retain some texture.
- Roast: Drizzle olive oil evenly over the smashed potatoes. Place the baking sheet in the oven and roast for 25 to 30 minutes until the edges are golden and crispy.
- Make Brown Butter Mixture: While roasting, melt butter in a small skillet over medium heat, stirring often, until it foams, turns nutty, and browns, approximately 5 minutes. Transfer browned butter to a bowl, then stir in maple syrup and cinnamon until combined.
- Prepare for Broiling: When the potatoes are roasted crispy, remove the baking sheet from the oven and set the oven to broil.
- Apply Toppings and Broil: Drizzle the brown butter mixture evenly over the roasted smashed potatoes. Sprinkle with pecans and flaky sea salt. Top with mini marshmallows, then broil for 1 to 2 minutes until marshmallows are golden brown. Watch carefully to prevent burning.
- Serve: Remove from oven and serve warm for best flavor and texture.
Notes
- You can substitute regular pecans if candied pecans are unavailable; for added sweetness, toast them with a little sugar.
- Watch marshmallows closely during broiling as they can burn quickly within seconds.
- For a vegan version, substitute butter with vegan butter and use maple syrup to keep it plant-based.
- This dish pairs well with roasted meats or as a festive holiday side.
- Use a sharp knife to ensure clean, even slices of sweet potato to facilitate proper cooking.
