Ingredients
Crust
- 1 ½ cups graham cracker crumbs (at least 12 full sheets)
- ⅓ cup granulated sugar
- 6 tablespoons butter, melted
Filling
- ½ cup butter
- 2 tablespoons coconut oil, melted
- 1 cup granulated sugar
- 2 large eggs plus 1 egg yolk
- 2 teaspoons pure vanilla extract
- ¾ cup unsweetened dutch process cocoa powder
- ½ cup all purpose flour
- ¼ teaspoon salt
- 1 cup semi-sweet chocolate chips (or chopped chocolate)
Topping
- 25 large marshmallows
Instructions
- Prep: Preheat your oven to 350°F (177°C) to get it ready for baking the pie.
- Make the Crust: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated and have a coarse sand texture. Press this mixture firmly into the bottom and up the sides of an ungreased 9-inch pie pan, using a flat-bottomed measuring cup to ensure even pressing. Set aside.
- Prepare the Filling: In a large microwave-safe bowl, melt the butter and then stir in the melted coconut oil and sugar until smooth. Let it cool a bit. Whisk in the eggs, egg yolk, and vanilla extract until fully incorporated. Add the cocoa powder, flour (spooned and leveled), and salt, stirring gently just until combined – be careful not to overmix. Fold in the chocolate chips or chopped chocolate. The filling will thicken quickly, so pour it into the prepared crust immediately.
- Bake the Pie: Spread the filling evenly in the crust and bake for 25 to 30 minutes. The edges should be set, but the center will be slightly soft, with a brownie-like texture.
- Add Marshmallows: Switch the oven to broil. Place the marshmallows on top of the pie in a single layer, pressing them in slightly for better adhesion. Broil for 1 to 2 minutes, watching very closely until the marshmallows turn golden and toasted. Be careful not to burn them.
- Serve: Allow the pie to cool for 30 to 45 minutes before slicing, or let it sit longer to achieve cleaner slices. Enjoy your delicious s’mores pie!
Notes
- Press the crust firmly to prevent it from crumbling when sliced.
- Do not overmix the filling to maintain a fudgy texture.
- Watch the marshmallows carefully during broiling to avoid burning.
- If desired, you can substitute semi-sweet chocolate chips with milk or dark chocolate according to preference.
- Letting the pie cool fully results in neater slices.
