This classic Italian spaghetti with garlic and olive oil is a simple, fragrant, and budget-friendly dish that is quick to prepare. Featuring al dente pasta tossed in a gently infused olive oil sauce with garlic, chili flakes, and fresh parsley, it’s perfect for a satisfying meal in just 10 minutes. Optionally topped with Parmesan cheese for added richness, this recipe is vegan-friendly when cheese is omitted.

  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Pasta

  • 1 lb (450 grams) spaghetti or other long pasta

Sauce

  • 1/2 cup (120 ml) extra virgin olive oil
  • 4-5 garlic cloves, finely sliced
  • 1 tsp dried chili flakes, or to taste (or 3 fresh chilies, seeds removed and finely chopped)
  • 1/4 cup fresh parsley, coarsely chopped
  • Salt, to taste
  • 1/4 cup grated Parmesan cheese, plus more to serve (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, meaning the pasta is tender but still has a slight bite, according to package instructions.
  2. Prepare the sauce ingredients: While the pasta cooks, if using fresh chilies instead of dried flakes, remove the seeds and finely chop them. Peel and thinly slice the garlic cloves.
  3. Infuse the olive oil: Gently heat the olive oil in a frying pan over medium-low heat. Add the sliced garlic and chili flakes or chopped fresh chilies and cook slowly for a few minutes until the garlic turns pale golden, allowing the flavors to infuse without burning.
  4. Add parsley to the sauce: Stir in the chopped fresh parsley into the infused oil and mix well.
  5. Drain pasta and reserve water: Once the spaghetti is al dente, drain it while reserving about 1/2 cup of the starchy cooking water.
  6. Toss spaghetti in the sauce: Add the drained spaghetti to the frying pan with the garlic-infused oil. Stir well to coat the pasta evenly. Add reserved cooking water as needed to keep the pasta moist and ensure a juicy consistency.
  7. Finish cooking in the sauce: Cook the pasta and sauce together over medium heat for about 30 seconds, stirring occasionally to marry the flavors.
  8. Serve: Transfer the pasta to plates, sprinkle with extra chopped parsley, and grated Parmesan cheese if desired. Serve immediately and enjoy!

Notes

  • Be careful not to burn the garlic as it will turn bitter; cook it gently until pale golden.
  • If you prefer a spicier dish, increase the amount of chili flakes or fresh chilies to taste.
  • This recipe can be made vegan by omitting the Parmesan cheese or using a vegan cheese alternative.
  • Reserve some pasta cooking water to adjust sauce consistency and help it cling better to the spaghetti.
  • Serve immediately for the best texture and flavor.
