  • Total Time: 35 minutes
  • Yield: 6 servings

Ingredients

Slider Ingredients

  • 1 Rotisserie Chicken (meat pulled off and shredded)
  • 1/2 cup BBQ sauce
  • 1 green pepper (cut into small strips)
  • 1 red pepper (cut into small strips)
  • 1 yellow pepper (cut into small strips)
  • 1 orange pepper (cut into small strips)
  • 1 cup mozzarella cheese (shredded)
  • 1 package Hawaiian sweet rolls

Butter Glaze

  • 5 tablespoons butter (melted)
  • 1 tablespoon dried parsley
  • 1 tablespoon red pepper flakes (or more to taste)

Instructions

  1. Preheat the oven or grill: Preheat your oven or grill to 350 degrees F to ensure even cooking of the sliders.
  2. Prepare the baking dish: Spray a 9 x 13-inch pan with non-stick spray to prevent sticking.
  3. Arrange bottom buns: Line the bottom of the pan with the bottom halves of the Hawaiian sweet rolls.
  4. Mix chicken and BBQ sauce: In a medium bowl, combine the shredded rotisserie chicken with BBQ sauce until well coated. Evenly spread this mixture over the bottom buns in the pan.
  5. Prepare and layer peppers: In a large bowl, combine green, red, yellow, and orange pepper strips. Toss to mix, then spread the peppers evenly over the BBQ chicken layer.
  6. Add cheese: Sprinkle shredded mozzarella cheese evenly over the layered peppers.
  7. Top with bun tops: Place the top halves of the Hawaiian rolls over the cheese layer, pressing down gently to compact the sliders.
  8. Make and apply butter glaze: Melt butter in the microwave, then stir in dried parsley and red pepper flakes. Pour this mixture evenly over the top of the slider buns to add flavor and help achieve a golden crust.
  9. Cover and bake: Cover the pan tightly with foil and bake in the preheated oven or on the grill for 15 minutes to heat through and meld flavors.
  10. Uncover and finish baking: Remove the foil and bake or grill for an additional 5 to 10 minutes, until the cheese is melted and the tops of the buns are golden brown.
  11. Serve: Remove from heat, separate the sliders, and serve immediately with a big smile!

Notes

  • Use rotisserie chicken for convenience, but you can also roast and shred your own chicken.
  • Adjust red pepper flakes to control the spiciness according to your preference.
  • Substitute mozzarella with cheddar or Monterey Jack cheese for different flavor profiles.
  • These sliders are best served fresh but can be reheated covered in foil at 350°F for 10 minutes.
  • If you want a milder version, omit the red pepper flakes in the butter glaze.
