  • Total Time: 40 minutes
  • Yield: 8 servings

Ingredients

Pasta and Protein

  • 12 ounces penne pasta
  • 1 pound boneless skinless chicken breast, diced
  • Salt and pepper, to taste

Vegetables

  • 1 yellow onion, minced
  • 1 red bell pepper, diced
  • ¾ pound asparagus, coarsely diced (tough ends removed)
  • 1 cup frozen peas

Chipotle Cream Sauce

  • 1 (7 ounce) can chipotle peppers in adobo sauce (reserve adobo sauce)
  • 2 cloves garlic, minced
  • ¼ cup honey
  • 2 cups heavy cream
  • ½ cup parmesan cheese, shredded
  • Salt and pepper, to taste

Garnish

  • Chopped cilantro
  • Additional shredded parmesan cheese

Instructions

  1. Cook Pasta: Prepare 12 ounces of penne pasta according to the package directions until just al dente. Drain and set aside.
  2. Prepare Chicken and Vegetables: Dice 1 pound boneless skinless chicken breast into 1-inch pieces. Season with salt and pepper. Prepare the vegetables by mincing the yellow onion, dicing the red bell pepper, and coarsely dicing the asparagus after removing tough ends.
  3. Sauté Chicken: Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the diced chicken pieces and sauté until browned and fully cooked through, about 5–7 minutes.
  4. Sauté Vegetables: Add the minced yellow onion, diced red bell pepper, asparagus, and frozen peas to the skillet with the chicken. Continue to sauté until the vegetables are tender, about 10 minutes.
  5. Prepare Chipotle Peppers: Remove chipotle peppers from the 7-ounce can, reserving the adobo sauce. Dice the chipotle peppers into smaller pieces. Add 3 tablespoons of the diced peppers and 2 cloves minced garlic to the skillet. Sauté for an additional 2 minutes to release flavors.
  6. Add Sauce Ingredients: Pour ¼ cup of the reserved adobo sauce, ¼ cup honey, 2 cups heavy cream, and ½ cup shredded parmesan cheese into the skillet. Season with salt and pepper to taste, stirring well to combine all ingredients.
  7. Combine Pasta and Simmer: Stir the cooked pasta into the skillet, mixing well to coat with the chipotle cream sauce. Bring the mixture to a gentle boil, then reduce heat to low and simmer for 5 minutes to thicken the sauce and blend the flavors.
  8. Serve: Remove skillet from heat and serve the pasta garnished with chopped cilantro and additional shredded parmesan cheese. Enjoy your creamy, spicy chicken chipotle pasta!

Notes

  • The chipotle peppers in adobo sauce add a smoky heat; adjust the quantity to your heat preference.
  • To save time, pre-cut vegetables can be used.
  • If heavy cream is not available, you can substitute with half-and-half, though the sauce will be less rich.
  • Make sure not to overcook the pasta to maintain a firm texture that holds up well in the sauce.
  • Leftovers should be stored in an airtight container in the refrigerator and consumed within 3 days.
