Ingredients
Chicken Meatballs
- 1 pound ground chicken
- 2 teaspoons garlic powder
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- ¾ teaspoon salt
- ½ teaspoon red pepper flakes
- 3 tablespoons honey (for glaze)
- 1 teaspoon apple cider vinegar (for glaze)
Buffalo Ranch Dipping Sauce
- ¼ cup ranch dressing
- 2 tablespoons buffalo sauce (such as Moore’s or Frank’s)
- 2 tablespoons honey
Instructions
- Prepare the Oven and Baking Sheet: Preheat your oven to 400 degrees F and line a baking sheet with heavy-duty foil. If available, place a wire baking rack on top of the foil and spray it or the foil with cooking spray to prevent sticking.
- Mix the Meatball Ingredients: In a large bowl, combine the ground chicken, garlic powder, chili powder, cumin, paprika, salt, and red pepper flakes. Mix thoroughly until the spices are evenly distributed throughout the meat.
- Form the Meatballs: Shape the chicken mixture into small balls and arrange them in a single layer on the prepared baking sheet or wire rack. Continue until all the meat mixture is used.
- Initial Baking: Bake the meatballs in the preheated oven for 15 minutes to start cooking through.
- Prepare the Honey Glaze: While the meatballs bake, stir together honey and apple cider vinegar in a small bowl until well combined.
- Glaze the Meatballs: After 15 minutes, remove the meatballs from the oven and brush the honey-cider vinegar mixture generously over each meatball to coat thoroughly.
- Finish Baking: Return the glazed meatballs to the oven and bake for an additional 10-15 minutes, or until the chicken is fully cooked through and the glaze is set.
- Make the Dipping Sauce: In a separate bowl, combine ranch dressing, buffalo sauce, and honey. Mix well and refrigerate until ready to serve.
- Serve: Transfer the baked meatballs to a serving platter and serve alongside the buffalo ranch dipping sauce. Enjoy warm.
Notes
- Using a wire rack on the baking sheet helps ensure even cooking and prevents sogginess by allowing air to circulate around the meatballs.
- The honey glaze adds a perfect balance of sweetness and tanginess, but you can adjust the vinegar quantity to taste.
- These meatballs can be made ahead of time and reheated before serving.
- For a spicier kick, increase the amount of red pepper flakes or add cayenne pepper.
- Ground turkey can be substituted for chicken if preferred.
