Ingredients
Flatbread Base
- 1 flatbread (4″ x 8″)
- 1 tablespoon olive oil
Sautéed Vegetables
- 1 small shallot, minced
- 3 cloves garlic, minced
- 2 cups fresh spinach
Cheeses
- 1/2 cup whole milk ricotta cheese
- ½ cup shredded mozzarella
- ¼ cup crumbled feta cheese
Seasoning
- Crushed red pepper flakes
- Salt and pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) to prepare for baking the flatbread.
- Sauté Shallot and Garlic: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced shallot and garlic, and sauté for about 3 minutes until they soften and become fragrant.
- Cook Spinach: Add the fresh spinach to the skillet with the shallots and garlic, cooking for an additional minute until the spinach wilts. Remove the skillet from heat once wilted.
- Prepare Flatbread: Place the flatbread on a baking sheet lined with parchment paper to prevent sticking and for easy cleanup.
- Assemble Toppings: Spread the ricotta cheese evenly over the flatbread, followed by the shredded mozzarella. Then distribute the sautéed shallots and spinach on top. Sprinkle the crumbled feta cheese evenly over the assembled flatbread.
- Bake Flatbread: Bake the flatbread in the preheated oven for 8 to 10 minutes, or until the edges are crispy and the mozzarella cheese has melted and is bubbly.
- Season and Serve: Remove the flatbread from the oven. Sprinkle crushed red pepper flakes over the top for heat and season with salt and pepper to taste. Slice and serve warm.
Notes
- Use whole milk ricotta for creaminess; part-skim ricotta may make the flatbread less rich.
- If you prefer a milder flavor, reduce or omit the crushed red pepper flakes.
- For a gluten-free option, substitute the flatbread with a certified gluten-free flatbread.
- Fresh spinach can be substituted with baby kale or Swiss chard, adjusting cook time to wilt accordingly.
- Leftover flatbread can be reheated in the oven for a few minutes to restore crispness.
