  • Total Time: 1 hour 50 minutes
  • Yield: 24 servings

Ingredients

Butter Mixture

  • 12 tablespoons unsalted butter (at room temperature)
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar (lightly packed)
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 2 cups + 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Add-ins and Toppings

  • 1-1/4 cups white chocolate chips (divided as 1 cup and 1/4 cup)
  • 3 cups miniature marshmallows
  • 3/4 cup pastel M&M’s
  • 1 to 3 tablespoons Spring sprinkles

Instructions

  1. Prepare: Preheat the oven to 350°F (177°C). Grease a 9×13-inch pan with cooking spray and line it with parchment paper for easy removal, avoiding foil as these bars are sticky.
  2. Combine Wet Ingredients: In a large bowl, cream together the room-temperature butter, granulated sugar, and light brown sugar using a hand mixer or stand mixer until light and creamy. Then blend in the egg, egg yolk, and vanilla extract until fully combined.
  3. Combine Dry Ingredients: In a separate large bowl, mix the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Then fold in 1 cup of white chocolate chips using a wooden spoon.
  4. Bake: Press the cookie dough evenly into the prepared 9×13-inch pan. Bake for 22 to 26 minutes, or until the surface is no longer glossy and the edges are lightly browned. Remove from oven and immediately sprinkle the miniature marshmallows evenly over the top.
  5. Finish Baking: Return the pan to the oven and bake again for 1 minute and 30 seconds to slightly melt the marshmallows. Then gently press the marshmallows down a bit to adhere.
  6. Add Toppings: Evenly sprinkle the remaining 1/4 cup white chocolate chips, pastel M&M’s, and spring sprinkles over the melted marshmallows to create the decorative confetti effect.
  7. Serve: Allow the bars to cool completely for 1 to 3 hours to set properly. Use a hot, sharp knife (heat the knife under hot water and dry between cuts) to slice into bars. Best enjoyed within 1 to 2 days as the marshmallows can become unpleasant over time.

Notes

  • Use parchment paper instead of foil to line the baking pan because the bars are sticky.
  • Let the bars cool completely before slicing to ensure clean cuts and proper texture.
  • If the marshmallows harden or the bars set unevenly, warming the knife will help make cleaner slices.
  • These bars are best eaten fresh within 1 to 2 days to maintain marshmallow softness.
