Ingredients
Wet Ingredients
- 2 large eggs
- 1 cup granulated sugar
- 3 tablespoons unsalted butter
- 1/3 cup canola oil
- 1 1/2 teaspoons vanilla extract
Chocolate and Cocoa
- 2 ounces semisweet chocolate baking bar (or 1/3 cup chocolate chips)
- 1/2 cup regular unsweetened cocoa powder
- 1/3 cup chocolate chunks (semisweet or dark)
Dry Ingredients
- 2/3 cup all purpose flour (80g)
- 1/8 teaspoon baking powder
- 1 teaspoon table salt
Instructions
- Preheat and prepare pan: Preheat your oven to 350°F. Line an 8×8 inch metal baking pan with foil or parchment paper, then spray the lining with nonstick baking spray to ensure easy removal of the brownies.
- Melt chocolate and butter: Combine the semisweet chocolate and unsalted butter in a heatproof bowl. Microwave for 30 seconds, stir, and continue microwaving in 30-second intervals, stirring in between, until the mixture is fully melted and smooth. Be careful not to overheat and burn the chocolate.
- Beat eggs and sugar: In a large mixing bowl, beat the eggs and granulated sugar together for about 5 minutes until the mixture becomes pale yellow and fluffy. This will help give the brownies a nice texture.
- Add oil, cocoa powder, salt, and vanilla: Stir the canola oil, unsweetened cocoa powder, table salt, and vanilla extract into the egg and sugar mixture until everything is well combined.
- Incorporate melted chocolate: Pour the melted chocolate and butter mixture into the wet ingredients and stir again until smooth and homogenous.
- Add flour and baking powder: Sift in the all-purpose flour and baking powder, then fold gently to form a smooth batter without overmixing to keep the brownies tender.
- Prepare to bake: Spread the brownie batter evenly into the prepared pan. Sprinkle the chocolate chunks evenly on top for added texture and bursts of chocolate.
- Bake: Place the pan in the oven and bake for 23-24 minutes. Test doneness by inserting a toothpick into the center; it should come out with moist crumbs but not wet batter.
- Cool and serve: Allow the brownies to cool completely before lifting them from the pan using the foil/parchment. Cut into 9 squares and enjoy.
Notes
- Use good quality semisweet chocolate for the best flavor.
- Do not overbake to keep the brownies fudgy and moist.
- Allow brownies to cool completely before cutting for clean slices.
- You can substitute canola oil with vegetable oil or melted coconut oil if desired.
- Storing brownies in an airtight container at room temperature will keep them fresh for up to 3 days.
