This hearty Steak Chili with Beans is a comforting slow-cooked dish featuring tender chunks of beef simmered with black and kidney beans, aromatic spices, fresh garlic, and tomato sauce. Perfect for a satisfying meal, it blends rich flavors of paprika, cumin, coriander, and cinnamon with fresh cilantro for a balanced and warming chili experience.

  • Total Time: 2 hours 5 minutes
  • Yield: 3 servings

Ingredients

Main Ingredients

  • 1-2 Tablespoons Oil
  • 1 Large Onion, sliced
  • 1 Pound Beef (such as chuck roast), cut into chunks
  • 2-3 Garlic Cloves, fresh, chopped
  • 2 Cans Beans (Black Beans and/or Kidney Beans), drained
  • 1 Cup Tomato Sauce
  • 1½ Cups Broth (beef or vegetable)
  • 1 Bay Leaf
  • 2 Teaspoons Paprika
  • 1 Teaspoon Dried Oregano
  • ¼ Teaspoon Ground Black Pepper
  • Pinch Ground Cinnamon
  • ½ Teaspoon Ground Cumin Seeds
  • ½ Teaspoon Ground Coriander Seeds
  • 1 Whole Allspice, crushed
  • Fresh Cilantro, chopped (quantity to preference)
  • Salt, to taste
  • ½ Cup Water (optional, only if chili becomes too dry)

Instructions

  1. Sauté Onions: Heat oil in a large pot over medium-low heat. Add the sliced onions and cook, stirring occasionally, until they become partially soft and translucent.
  2. Sear the Beef: Increase heat to medium-high and add the beef chunks. Sear them on all sides by stirring frequently until browned.
  3. Add Garlic, Beans, Tomato Sauce, and Broth: Reduce heat or remove the pot from the heat briefly. Stir in the chopped garlic, drained beans, tomato sauce, and broth thoroughly.
  4. Add Seasonings: Mix in the bay leaf, paprika, dried oregano, black pepper, cinnamon, ground cumin, ground coriander, crushed allspice, and freshly chopped cilantro. Add salt to taste but adjust again at the end. Combine all ingredients well.
  5. Slow Cook: Cover the pot and reduce heat to low. Let the chili simmer gently for 1½ to 2 hours, stirring occasionally to prevent sticking. The beef should become tender and the chili will thicken. If the chili becomes too dry during cooking, stir in up to ½ cup of water to maintain the desired consistency.

Notes

  • Use chuck roast or similarly tough beef cuts that benefit from slow cooking to ensure tender meat.
  • Adjust salt at the end to avoid over-seasoning.
  • You can customize the beans by using all black beans, kidney beans, or a mix depending on preference.
  • Fresh cilantro adds brightness; add more or less depending on your taste.
  • If you prefer a spicier chili, consider adding chili powder or fresh chili peppers.
