Ingredients
Potatoes
- 1 pound petite gold potatoes
- Olive oil
- Kosher salt
- Black pepper
Steak and Seasoning
- 2 pounds steak of choice (strip steak recommended)
- 4 to 5 cloves garlic, minced
- 2 tablespoons fresh chopped rosemary (or 1 tablespoon Italian seasoning)
- Olive oil (additional for coating steak)
- Kosher salt
- Black pepper
Cheese
- 4 to 6 ounces goat cheese log
Instructions
- Prepare Potatoes: Cut the petite gold potatoes into quarters, or halves if some are very small, aiming for roughly inch-sized pieces. Spread them evenly on a sheet pan. Drizzle with olive oil and season generously with kosher salt and black pepper. Toss the potatoes until they are evenly coated. Bake in a preheated 400°F (204°C) oven for 25 to 30 minutes until golden and tender.
- Add Steak and Seasonings: While potatoes bake, cut the steak into bite-sized cubes. After the initial roasting of potatoes, remove the pan from the oven and add the cubed steak on top. Drizzle additional olive oil, sprinkle minced garlic, fresh chopped rosemary or Italian seasoning, kosher salt, and black pepper over the steak and potatoes. Toss carefully to combine all ingredients evenly on the pan.
- Add Goat Cheese and Finish Baking: Cut the goat cheese log into smaller pieces and scatter them evenly over the steak and potatoes on the sheet pan. Return the pan to the oven and bake for another 10 to 15 minutes until the steak is cooked to your preference and the goat cheese softens and melts slightly. Before serving, gently toss everything together to combine flavors.
Notes
- Adjust the size of potato pieces to ensure even cooking—smaller potatoes may only need to be halved.
- Use fresh rosemary for a more vibrant herbal flavor, but Italian seasoning works well too.
- For medium-rare steak, monitor cooking times carefully as oven temperatures and steak thickness may vary.
- Goat cheese adds a tangy creaminess, but you can substitute with feta or queso fresco if preferred.
- This dish is best served fresh and hot right out of the oven.
