Ingredients
Overnight Oats Base
- 1 cup rolled oats
- 1 tablespoon chia seeds
- 2 tablespoons almond butter
- 1 cup milk (or almond milk)
- 2-3 tablespoons maple syrup (or to taste)
- 1/2 cup vanilla Greek yogurt
Fruit
- 6-7 medium strawberries (fresh or frozen and thawed)
White Chocolate Cream Topping
- 1 tablespoon white chocolate chips
- 1/2 teaspoon coconut oil
- 1/4 cup vanilla Greek yogurt
Instructions
- Prepare the oat mixture: In two jars, combine rolled oats, chia seeds, almond butter, milk, maple syrup, and 1/2 cup vanilla Greek yogurt. Stir well to mix all ingredients evenly.
- Add the strawberries: Slice the strawberries and gently fold them into the oat mixture in each jar, distributing evenly.
- Melt the chocolate and oil: In a microwave-safe bowl, melt the white chocolate chips and coconut oil together for 30-45 seconds, stirring every 15 seconds to ensure smooth melting without burning.
- Whisk in yogurt: Slowly whisk the 1/4 cup vanilla Greek yogurt into the melted chocolate mixture until the cream topping is smooth and creamy.
- Top the oats: Spoon the white chocolate cream topping over the strawberry oat mixture in each jar and smooth the surface with the back of the spoon.
- Refrigerate overnight: Seal the jars with lids and place them in the refrigerator to chill overnight, allowing the oats to soak and flavors to meld.
- Serve: Enjoy the strawberries and cream overnight oats cold in the morning straight from the jar.
