This Strawberry Beet Instant Pot Applesauce is a vibrant and healthy twist on classic applesauce, combining sweet apples, earthy beets, and fresh strawberries. Cooked quickly under pressure and pureed to a smooth consistency, it offers a naturally sweet and nutrient-packed breakfast or snack option with a beautiful pink hue. Perfect for families looking for a wholesome treat with added fiber and antioxidants.

  • Total Time: 23 minutes
  • Yield: 6 servings

Ingredients

Fruits and Vegetables

  • 6 apples, cored and roughly chopped (skins on for extra fiber, varieties like Pink Lady, Gala or Honeycrisp preferred)
  • 1 medium red beet (about 5 ounces), washed, peeled and roughly chopped
  • 16 ounces fresh strawberries (about 4 cups whole; frozen berries can be used)

Other Ingredients

  • 1½ Tablespoons lemon juice
  • 1 teaspoon ground cinnamon
  • 1 cup water

Instructions

  1. Prepare Ingredients: Core and roughly chop the apples, peel and chop the beet, and measure out the strawberries. Keep the apple skins on if you want extra fiber.
  2. Combine in Instant Pot: Place all prepared fruits and vegetables along with lemon juice, ground cinnamon, and water into the Instant Pot bowl.
  3. Seal and Cook: Secure the Instant Pot lid and lock it in place. Set the valve to sealing. Cook on HIGH pressure for 8 minutes. Note that it will take about 10 minutes for the pot to reach pressure before cooking begins.
  4. Release Pressure: When cooking time completes, perform a quick release to let out the steam carefully, ensuring safety when opening the lid.
  5. Puree the Sauce: Remove the lid and use an immersion blender to blend the mixture to your desired smoothness. If an immersion blender is unavailable, allow the mixture to cool slightly and transfer it to a blender to puree.
  6. Cool and Store: Note that the sauce will be somewhat thin while warm but will thicken as it cools. Enjoy immediately or let it cool completely before storing in an airtight container. Keep refrigerated for up to one week or freeze for longer storage.

Notes

  • Leaving apple skins on increases fiber content; peel if preferred for a smoother texture.
  • Frozen strawberries can be used if fresh are unavailable; no need to thaw before cooking.
  • The beet adds natural sweetness and vibrant color, but its amount can be adjusted to taste.
  • The sauce thickens upon cooling, so avoid adding extra thickening agents.
  • Store the applesauce in airtight containers to preserve freshness and prevent freezer burn if freezing.
