Instructions
- Make Candied Walnuts: Prepare the maple-vanilla candied walnuts by combining walnuts with maple syrup and vanilla extract, then baking or toasting until crunchy and caramelized. This step can be done ahead of time and stored at room temperature.
- Make Dressing: Prepare the strawberry balsamic dressing by blending fresh strawberries with balsamic vinegar, maple syrup, olive oil, salt, and pepper. Chill the dressing in the fridge until ready to use.
- Prepare Berries: Remove stems from the strawberries and slice or chop them as desired. Rinse blueberries and drain.
- Assemble Salad: In a bowl or plate, layer the mixed baby greens, then top evenly with sliced strawberries, blueberries, and candied walnuts. Drizzle with the strawberry balsamic dressing. Add any optional ingredients like vegan feta, mandarin slices, sliced onions, or avocado for extra flavor and texture.
- Store Leftovers: If you have leftovers, store the salad components and dressing separately in the refrigerator to maintain freshness. Combine just before serving.
