Ingredients
Brownie Batter
- 1 box brownie mix (homemade or store-bought)
- 2 large eggs
- 1/2 cup oil (canola oil or extra-virgin olive oil)
- 2 tablespoons water
- 1/2 teaspoon vanilla extract
Other Ingredients
- 2 16 oz large strawberries
- 1 bag marshmallows
- 1/4 cup chocolate chips
- Wooden skewers
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and spray mini muffin tins with non-stick spray to prevent sticking.
- Mix Brownie Batter: In a large bowl, whisk together the eggs, olive oil, water, and vanilla extract. Sprinkle the dry brownie mix over the wet ingredients and stir gently until just combined to avoid overmixing.
- Bake Brownie Bites: Divide the batter evenly among the prepared mini muffin tins. Bake for 15 to 20 minutes, or until a cake tester inserted into the center comes out clean. Let the brownies cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- Prepare Strawberries: Clean and dry the strawberries thoroughly. Cut off the tops if necessary to create uniform sizes suitable for skewering.
- Assemble Kabobs: Thread the wooden skewers with the strawberries, brownie bites, and marshmallows in alternating order, such as berry, brownie, marshmallow, brownie, and berry. Arrange the skewers on a wax paper-lined cookie sheet to prepare for the chocolate drizzle.
- Melt Chocolate: Place the chocolate chips in a microwave-safe glass bowl and melt them in the microwave for about two minutes, stirring every 30 seconds to ensure an even melt. Once melted, transfer the chocolate into a large plastic bag and cut off a small corner tip to use as a piping bag.
- Drizzle Chocolate and Chill: Drizzle the melted chocolate over the assembled kabobs evenly. Place the kabobs in the refrigerator to allow the chocolate to set before serving.
Notes
- You can use homemade brownie mix or your favorite store-bought mix.
- For uniform kabob sizes, choose medium to large strawberries and cut them to match the size of the brownie bites.
- Make sure the brownies are completely cool before assembling kabobs to prevent marshmallows from melting.
- Use canola or extra-virgin olive oil as a healthier option in the brownie batter.
- Chocolate drizzle can be replaced or combined with white chocolate for variety.
- These kabobs are best served chilled after the chocolate has set but can be brought to room temperature before serving if preferred.
