This luscious Strawberry Cream Cheese Frosting combines fresh strawberries cooked down into a thick preserve with creamy butter and tangy cream cheese, sweetened with powdered sugar and flavored with vanilla. Perfect for frosting cupcakes, layering cakes, or adding a sweet and fruity finish to your favorite desserts.

  • Total Time: 35 minutes
  • Yield: Enough frosting for 2 dozen cupcakes or one 9-inch layered cake

Ingredients

Fruit Base

  • 1 cup chopped fresh strawberries
  • 1 tablespoon granulated sugar
  • a splash of water

Frosting

  • 8 tablespoons (4 ounces) unsalted butter, at room temperature
  • 8 ounces cream cheese, at room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups powdered sugar

Instructions

  1. Make Strawberry Preserve: Combine the fresh strawberries, granulated sugar, and a splash of water in a small saucepan. Cook over medium-low heat, stirring every few minutes to prevent burning, until the strawberries reduce down to about 1/4 cup and form a thick jam-like preserve. This process takes about 20 to 30 minutes; add more water if needed to keep from burning.
  2. Cool Strawberry Mixture: Scrape the cooked strawberry preserve into a separate bowl and allow it to cool completely.
  3. Cream Butter and Cream Cheese: Using an electric mixer on high speed, beat the unsalted butter and cream cheese together until the mixture is smooth and creamy.
  4. Combine Strawberry and Vanilla: Add the cooled strawberry preserve and vanilla extract to the creamed butter and cream cheese mixture. Beat until well combined and evenly mixed.
  5. Add Powdered Sugar: Gradually stream in the powdered sugar while continuing to beat the mixture until the frosting is creamy, smooth, and fluffy.
  6. Use or Store: Use the frosting immediately on cupcakes or between cake layers for a delicious finish. Alternatively, place the frosting in a plastic storage bag and freeze for up to 3 months for later use.

Notes

  • Be sure to let the strawberry preserve cool completely before adding it to the butter and cream cheese to prevent melting and separation.
  • If the frosting becomes too soft, refrigerate for 15-20 minutes before using for easier handling.
  • This frosting pairs beautifully with vanilla, chocolate, or lemon cakes and cupcakes.
  • You can adjust the sweetness by adding more or less powdered sugar according to taste.
  • Freeze leftovers in an airtight container or plastic bag to maintain freshness for up to 3 months.
