Delight in these luscious Strawberry Shortcake Truffles, made from moist strawberry cake mix blended with cream cheese and coated in colorful candy melts. These bite-sized treats are elegantly decorated with drizzled white chocolate and crumbled shortcake, making them perfect for parties or a sweet indulgence anytime.

  • Total Time: 2 hours 25 minutes
  • Yield: 20 servings

Ingredients

Truffle Mixture

  • 1 box of extra moist strawberry cake mix
  • 8 oz block of cream cheese, softened at room temperature
  • 1 teaspoon vanilla extract

Coating & Garnish

  • 1 to 1½ cups light pink candy melts
  • ½ cup white candy melts
  • Crumbled shortcake for garnishing

Instructions

  1. Prepare Baking Surface: Line a large cookie sheet with parchment paper and set it aside to hold the truffles during chilling.
  2. Mix Ingredients: In a medium mixing bowl, combine the strawberry cake mix, softened cream cheese, and vanilla extract. Mix for 2-3 minutes until fully combined and the mixture turns pink and crumbly.
  3. Form Truffles: Using a 1-inch cookie scoop, portion out the mixture and roll into 1 to 1½ inch balls. Smooth each ball using the palms of your hands until evenly rounded.
  4. Chill Truffles: Place the rolled balls on the prepared parchment-lined cookie sheet and refrigerate for 1 hour to firm up.
  5. Prepare Pink Candy Melts: About 5-10 minutes before the truffles finish chilling, add the pink candy melts to a microwave-safe bowl. Microwave at 50% power or defrost mode for 1 minute, then stir. Continue microwaving in 30-second intervals, stirring between, until smooth and silky.
  6. Dip Truffles: Using two forks or dipping tools, completely coat each truffle ball with the melted pink candy. Place coated truffles back on parchment paper.
  7. Chill After Dipping: Refrigerate the dipped truffles for 30 minutes to set the coating.
  8. Prepare White Candy Melts: Repeat the melting process with the white candy melts near the end of the 30-minute chill until smooth and silky.
  9. Decorate Truffles: Fill a piping bag fitted with a small round tip with the melted white candy. Drizzle thin lines over each truffle by moving the bag back and forth. Immediately sprinkle with crumbled shortcake for garnish.
  10. Final Chill: Place the decorated truffles back in the refrigerator and chill for an additional 30 minutes before serving to ensure they are fully set.

Notes

  • If candy melts seize or thicken during melting, add a small amount of vegetable oil or shortening to restore smoothness.
  • Use parchment paper or a silicone mat to prevent sticking and aid easy removal.
  • The truffles can be stored in an airtight container in the refrigerator for up to one week.
  • For best results, handle truffles with clean, dry hands to avoid fingerprints on the coating.
