Ingredients
Potato Nests:
- 4 large Russet potatoes, peeled and chopped
- 1 egg, beaten
- ½ cup shredded cheddar or mozzarella cheese (optional)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons flour or breadcrumbs
- Baking spray or oil for muffin tin/frying
Fillings:
- 1 cup cooked ground turkey, seasoned
- 3 scrambled eggs
- 1 cup sautéed spinach & mushrooms with garlic
- ½ cup shredded cheddar cheese
- ¼ cup sour cream (optional)
- 2 tablespoons chopped chives
Instructions
- Boil Potatoes: Peel, chop, and boil the potatoes in salted water until fork-tender, about 15–20 minutes. Drain the water and mash the potatoes while they are still warm.
- Prepare Potato Mixture: Mix the beaten egg, salt, black pepper, shredded cheese (if using), and flour or breadcrumbs into the mashed potatoes. Stir thoroughly until the mixture holds together well enough to shape.
- Form Nests: Grease a muffin tin with baking spray or oil. Spoon the potato mixture into the muffin cups, pressing the mixture up the sides to create nest shapes.
- Cook Nests: Bake the nests in a preheated oven at 400°F (200°C) for 20–25 minutes until golden and crisp. Alternatively, fry the nests in a skillet with oil until crisp and golden brown on all sides.
- Fill and Serve: Fill each potato nest with cooked ground turkey, scrambled eggs, sautéed spinach and mushrooms, or any preferred toppings. Top with shredded cheese, chopped chives, and sour cream if desired. Serve warm and enjoy.
Notes
- These nests don’t require perfect shaping; even cracked edges provide comforting texture and flavor.
- Feel free to experiment with fillings such as bacon and cheese, chicken and vegetables, or a brunch version with eggs and sausage.
- This recipe is very adaptable and can be tailored to your family’s preferences and available ingredients.
